Tips for success
To achieve the ultimate crispy bacon exterior without overcooking the chicken, you can place a wire rack inside your baking sheet and lay the chicken on top.
This elevates the chicken, allowing hot air to circulate completely around the bacon, rendering the fat more efficiently and crisping the bottom of the rolls.
If you find that your bacon is slipping during wrapping, you can secure the ends with wooden toothpicks.
Just remember to soak the toothpicks in water for 15 minutes before using so they do not burn in the oven, and be sure to remove them before slicing and serving to your guests.
Variations
- Jalapeño Popper Chicken: Stir diced fresh jalapeños and cheddar cheese into the cream cheese before stuffing the chicken breasts.
- Garlic Herb Chicken: Mix minced garlic, chives, and dill into the cream cheese for a savory herb-forward filling.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freeze baked chicken rolls in a freezer-safe container for up to 2 months. Thaw in the fridge overnight.
- Reheat
- Reheat in the oven at 350°F (175°C) for 15 minutes or until warmed through to keep the bacon crispy.
Store any leftover chicken in an airtight container in the refrigerator for up to three days. Allow the chicken to cool down for no more than two hours before placing it in the fridge to ensure food safety.
You can prep and wrap the chicken breasts up to 24 hours in advance. Keep them tightly covered in plastic wrap in the refrigerator until you are ready to bake. Let them sit at room temperature for 15 minutes before cooking.
Serving ideas
Serve these rich, savory chicken rolls alongside a light, crisp green salad tossed with a simple vinaigrette to balance the richness of the cream cheese and bacon.
Roasted asparagus or steamed green beans also make excellent, vibrant side dishes.
For a heartier meal, pair the chicken with garlic mashed potatoes or wild rice.
The savory juices from the baking sheet can be drizzled over the sides for extra flavor, making for a truly comforting and complete dinner presentation.

Crispy Bacon-Wrapped Cream Cheese Stuffed Chicken

Ingredients
- 8 oz cream cheese, softened
- 4 boneless, skinless chicken breasts
- 1 tbsp poultry seasoning blend
- 8 slices bacon
- 2 tbsp fresh parsley, chopped
Instructions
- Place the boneless, skinless chicken breasts on a clean cutting board. Using a sharp paring knife, carefully cut a horizontal pocket into the thickest part of each breast, being careful not to slice all the way through to the other side.
- Divide the softened cream cheese evenly among the four chicken breasts. Spoon the cheese carefully into each prepared pocket, pressing it gently toward the back of the slit to ensure it is completely enclosed.
- Sprinkle the poultry seasoning blend evenly over all sides of the stuffed chicken breasts. Rub the seasoning gently into the chicken skin and meat to ensure full coverage and deep flavor throughout.
- Wrap two slices of bacon tightly around each stuffed chicken breast, overlapping the edges slightly to seal the pocket and hold the cream cheese inside. Tuck the loose ends of the bacon underneath the chicken.
- Place the wrapped chicken breasts on the prepared rimmed baking sheet. Bake in the preheated oven for 25 to 30 minutes, or until the bacon is crispy and the chicken registers an internal temperature of 165°F (74°C) on a meat thermometer.
- Remove the baking sheet from the oven and let the chicken rest for 5 minutes. Sprinkle the chopped fresh parsley over the crispy bacon-wrapped chicken rolls before slicing and serving warm.
