Before you start
Before you begin, make sure your phyllo is fully thawed if it was frozen. Keep it covered with a damp towel while you work to prevent it from drying out. Have all your ingredients measured and ready: melted butter, kaymak at room temperature so it spreads easily, and the pistachio-sugar mixture combined.
Preheat your oven to 425°F (220°C) and butter your baking pan. If you are using a copper pan, make sure it is well seasoned; otherwise, a heavy baking sheet lined with parchment works just as well.
Ingredients at a glance (5)
- 4 sheets paper-thin katmer phyllo (or yufka)
- 1/2 cup unsalted butter, melted
- 5 oz buffalo milk kaymak (clotted cream)
- 1/2 cup shelled green pistachios, finely ground
- 1/4 cup granulated sugar
Instructions
Prepare and Fill
- Prepare the Phyllo and FillingLay one sheet of katmer phyllo on a clean, dry work surface. Brush the entire surface with melted butter, making sure to reach the edges. In a small bowl, mix the ground pistachios and granulated sugar. Set aside.Look for The phyllo should be evenly coated with butter, with no dry spots.Tip Keep the remaining phyllo sheets covered with a damp towel to prevent them from drying out.
- Add the Kaymak and Nut MixtureSpoon dollops of buffalo kaymak across the center of the buttered phyllo, leaving a border around the edges. Sprinkle the pistachio-sugar mixture evenly over the kaymak, covering it completely.Look for The filling should be evenly distributed, with the kaymak visible under the nut mixture.Tip Use a spoon to spread the kaymak gently; it will soften as it warms.
At the end of this phase, you will have four buttered phyllo sheets, each topped with dollops of kaymak and a generous sprinkle of pistachio-sugar. The phyllo should be pliable and slightly translucent, with the filling neatly centered.
The kaymak should be soft but not melted, and the nut mixture should cover it evenly. The kitchen will smell of butter and nuts, and the colors – pale cream, bright green, and golden pastry – are a preview of the final dish.
Fold and Bake
- Fold into an EnvelopeFold the four edges of the phyllo over the filling, one at a time, to form a neat rectangular envelope packet. Press the seams gently to seal. Repeat with the remaining three sheets, brushing each with butter and filling as before.Look for Each packet should be tight and sealed, with no filling leaking out.Tip Fold the edges firmly but gently to avoid tearing the delicate phyllo.
- Bake the KatmerPreheat the oven to 425°F (220°C). Place the packets on a buttered round copper pan or a heavy baking sheet. Bake for 10 minutes, until the phyllo is blistered and golden brown.Look for The katmer should be deeply golden and crisp to the touch.Tip If using a baking sheet, line it with parchment for easy cleanup.
The packets should be neat, rectangular envelopes with sealed edges. As they bake, the phyllo will blister and turn a deep golden brown, and the aroma of toasted nuts and butter will fill the kitchen. The surface will look crisp and slightly puffed, and you may see a few spots of butter bubbling around the edges. The packets should feel firm when gently pressed, and the filling should be visibly molten when you peek at the edges.
Slice and Serve
- Slice and ServeRemove the katmer from the oven and let it cool for 2 minutes. Using a pizza wheel or a sharp knife, cut each packet into 4 triangles. The filling will be molten and hot, so serve immediately.Look for The cut edges reveal the creamy, nutty filling with a loud flaky crackle.Tip Use a serrated knife for a cleaner cut without crushing the layers.
After a brief rest, the katmer is ready to slice. Using a pizza wheel, cut each packet into 4 triangles with a decisive motion to get a clean, flaky crackle. The cut faces will reveal the bright green pistachios and the creamy, molten kaymak, with steam rising from the center. The pastry should be shatteringly crisp on the outside and soft and creamy inside. Serve immediately, while the contrast between the hot filling and the crisp layers is at its peak.
Common mistakes
One common mistake is overfilling the katmer, which can cause the filling to leak out during baking. Keep the filling to about 2 tablespoons of kaymak and 1 tablespoon of nut mixture per packet. Another mistake is not brushing the phyllo thoroughly with butter; dry spots will bake up tough and chewy instead of crisp.
Be generous with the butter, but avoid pooling it on the surface. Finally, do not skip the rest time after baking – slicing immediately can cause the filling to spill out, and the layers may collapse. A short rest lets the pastry set while keeping the center warm and gooey.
How to tell it’s done
The katmer is done when the phyllo is deeply golden brown and blistered all over, with a few darker spots where the butter has caramelized. The edges should look crisp and slightly curled. When you tap the surface, it should sound hollow and feel firm to the touch.
The filling will be molten and hot, so let the katmer rest for 2 minutes before slicing to allow the kaymak to set slightly. The internal temperature of the filling does not need to be checked, as there are no raw proteins, but the pastry should be piping hot throughout.
