Before you start

Before beginning, ensure all ingredients are measured and ready. Prepare your workspace with two separate bowls for the breading station to keep the process efficient.

Have your air fryer preheated if your model requires it. Ensure you have plenty of paper towels on hand for drying the zucchini batons thoroughly, as this is the most critical step for success.

Ingredients at a glance (7)
  • 2 medium zucchini, cut into thick batons
  • Salt, to taste
  • 1 large egg, beaten
  • 100 g panko breadcrumbs
  • 50 g parmesan cheese, grated
  • 1 tsp Italian herbs
  • Lemon-garlic aioli, for serving

Instructions

Moisture Extraction

  1. Prep the Zucchini
Cut the zucchinis into thick, uniform batons. Sprinkle them generously with salt and place in a colander for 10 minutes to draw out excess moisture. Pat the batons completely dry with paper towels to ensure maximum crispiness during cooking.
Look for The zucchini should look slightly damp after salting and feel bone-dry after patting.
Tip Removing moisture is the secret to avoiding soggy fries.

The zucchini batons should appear slightly sweatier after the 10-minute rest. After drying, they must feel completely devoid of surface moisture. If they still feel tacky or wet, use additional paper towels to ensure they are bone-dry before proceeding to the egg wash.

Breading Application

  1. Coat the Batons
Prepare the breading station by beating the egg in one bowl. In a second bowl, combine the panko breadcrumbs, grated parmesan cheese, and Italian herbs. Dip each dry zucchini baton into the egg wash, allowing excess to drip off, then coat thoroughly in the panko-parmesan mixture, pressing lightly to adhere.
Look for The zucchini should be evenly coated with the breadcrumb mixture without any large gaps.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Use one hand for wet ingredients and one for dry to keep your fingers clean.

The batons should be uniformly coated in the parmesan-panko mixture. Check that the coating is pressed firmly onto the zucchini, as loose crumbs may burn or fall off in the air fryer. The egg wash should be thin and consistent, providing a sticky base for the breadcrumbs.

Air Frying

  1. Air Fry to Perfection
Arrange the breaded zucchini batons in the air fryer basket, ensuring there is enough space between each piece for hot air to circulate. Air-fry at 400°F (200°C) for 9 minutes until the parmesan-panko crust is deep gold and crispy. Remove carefully and serve immediately with the lemon-garlic aioli.
Look for The crust should be deep golden brown and sound hollow when tapped gently.
Tip Do not overcrowd the basket, or the fries will steam instead of crisping.

The fries are finished when the crust reaches a deep golden color and feels rigid. The air-fried aroma should be savory and toasted.

If the fries appear pale, cook for an additional minute, watching closely to prevent burning the parmesan. Serve immediately while the crust is at its peak crunch.

Common mistakes

A common mistake is failing to pat the zucchini dry after the salting process; any residual surface moisture will prevent the crust from crisping.

Overcrowding the air fryer basket is another error that leads to uneven cooking and steaming. Ensure there is significant space between each baton to allow the hot air to circulate freely for the best texture.

How to tell it’s done

The fries are done when the exterior crust is deep golden brown and feels firm to the touch. The panko should be crispy and well-blistered.

When bitten, the fry should produce an audible crunch, and the zucchini interior should be tender but not mushy. The egg coating must be fully set and cooked through to ensure food safety.

  • Egg dishes: 160°F (71°C) in the thickest part
