Tips for success
For the crispiest crust, use panko breadcrumbs rather than fine breadcrumbs—they create a light, airy crunch. Mixing the panko with grated parmesan adds flavor and helps the coating brown beautifully.
If you have time, let the breaded arancini rest in the refrigerator for 15 minutes before air frying; this helps the coating adhere and prevents cracking during cooking.
When shaping the arancini, keep your hands slightly damp to prevent the risotto from sticking. Make sure the mozzarella cube is completely enclosed; any exposed cheese will melt and leak during air frying.
For a more intense saffron flavor, add a pinch of saffron threads to the risotto while it cooks. If you prefer a spicier kick, add a pinch of red pepper flakes to the panko mixture.
Variations
- Cheese Center Swap: Replace the mozzarella with smoked provolone or fontina for a different melt and flavor. Cut the cheese into cubes and proceed as directed. Smoked cheese adds a deeper, more savory note.
- Herb-Infused Risotto: Stir a handful of chopped fresh herbs, such as parsley, chives, or basil, into the chilled risotto before shaping. This adds freshness and color to the filling without altering the cooking time.
- Spicy Arancini: Add 1/2 teaspoon of red pepper flakes or a pinch of cayenne to the panko mixture for a subtle heat. Serve with a spicy marinara or a drizzle of hot honey for contrast.
- Vegetable Addition: Fold 1/2 cup of finely chopped sautéed mushrooms or spinach into the risotto before shaping. Squeeze out any excess moisture from the vegetables to keep the rice firm.
Storage and make-ahead
- Fridge
- Store leftover arancini in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer at 180°C (350°F) for 5-7 minutes.
- Freezer
- Freeze uncooked breaded arancini on a baking sheet until solid, then transfer to a freezer bag for up to 2 months.
- Reheat
- Reheat cooked arancini in the air fryer at 180°C (350°F) for 5-7 minutes until hot and crispy. Avoid microwaving, as it makes the crust soggy.
Store any leftover arancini in an airtight container in the refrigerator for up to 3 days. Reheat them in the air fryer at 180°C (350°F) for 5-7 minutes until hot and crispy. The marinara can be stored separately in the refrigerator for up to 5 days.
The arancini can be assembled up to a day in advance. Shape and bread the balls, then place them on a baking sheet and refrigerate uncovered for up to 24 hours. Air fry as directed, adding 1-2 minutes to the cooking time if starting from cold. The marinara can also be made ahead and reheated when ready to serve.
Serving ideas
Serve the arancini immediately after air frying, while the crust is still crisp and the cheese is molten. Spoon a generous amount of warm marinara onto each plate and place the arancini on top or alongside.
Garnish with fresh basil leaves for a pop of color and a hint of freshness. These are perfect as an appetizer for a dinner party or as a fun weeknight meal.
For a more substantial meal, serve the arancini over a bed of arugula or with a side salad. They also pair well with a simple green vegetable or roasted tomatoes.
If serving as finger food, provide small bowls of marinara for dipping. The contrast of the crunchy exterior, creamy rice, and tangy sauce makes every bite satisfying.

Crispy Air Fryer Mozzarella Arancini with Basil Marinara

Ingredients
- 400 g cooked chilled saffron risotto
- 150 g fresh mozzarella, cut into 1/2-inch cubes
- 60 g all-purpose flour
- 2 large eggs, beaten
- 100 g panko breadcrumbs
- 40 g grated parmesan cheese
- 1 tsp Italian seasoning
- olive oil spray, for misting, to taste
- 150 ml warm San Marzano marinara sauce
- fresh basil leaves, for garnish, to taste
Instructions
- Scoop about 2 tablespoons of the chilled saffron risotto into the palm of one hand. Press an indentation in the center with a finger. Place a cube of fresh mozzarella into the indentation, then fold the risotto around the cheese, sealing it completely. Roll the ball between your palms until smooth and tight. Repeat with the remaining risotto and mozzarella, making 12 balls total.
- Place the flour in a shallow dish. Beat the eggs in a second shallow dish. In a third dish, combine the panko breadcrumbs, grated parmesan, and Italian seasoning, mixing well. Arrange the dishes in an assembly line: flour, egg, then panko mixture.
- Roll each risotto ball in the flour, shaking off any excess. Dip it into the beaten eggs, turning to coat completely. Finally, roll it in the panko-parmesan mixture, pressing gently so the crumbs adhere evenly. Place the coated balls on a plate. Repeat until all arancini are breaded.
- Preheat the air fryer to 200°C (400°F) for 3 to 5 minutes. While it heats, arrange the breaded arancini in the air fryer basket in a single layer, leaving a little space between each ball. You may need to work in batches depending on the size of your air fryer.
- Lightly mist the arancini with olive oil spray, turning them to coat all sides. This helps the panko turn golden and crunchy during air frying.
- Air fry the arancini at 200°C (400°F) for 12 minutes, turning them halfway through, until deeply golden brown and crispy on all sides. The internal temperature of the eggs in the coating should reach 160°F (71°C) to ensure they are fully set and safe to eat.
- While the arancini cook, gently warm the San Marzano marinara sauce in a small saucepan over low heat, stirring occasionally, until steaming. Keep it warm until ready to serve.
- Spoon the warm marinara onto a serving plate or into individual bowls. Place the hot arancini on top or alongside the sauce. Garnish with fresh basil leaves. Serve immediately while the crust is crisp and the cheese is molten.
