Tips for success
For the crispiest results, make sure the mushrooms are as dry as possible before coating. Wipe them with a paper towel, but avoid rinsing them, as excess moisture can make the breading soggy.
Press the panko mixture firmly onto the mushroom, especially into the scored lines, so it adheres well during cooking. Spraying with olive oil is essential—it helps the crust brown and become crunchy.
Serve the mushrooms immediately after air frying, as they are best when hot and crisp. If you need to hold them, keep them warm in a 200°F (95°C) oven for up to 15 minutes, but note that they may lose some crunch.
The dip can be made ahead and stored in the refrigerator; just give it a stir before serving.
Variations
- Spicy Kick: Add 1/2 teaspoon cayenne pepper or chili flakes to the panko mixture for a spicy version. Serve with a cooling ranch dip instead of the garlic herb dip.
- Cheesy Herb Crust: Mix 2 tablespoons grated Parmesan cheese into the panko mixture for a savory, cheesy crust. Reduce the salt slightly to balance the cheese's saltiness.
- Lemon Pepper Twist: Add 1 teaspoon lemon zest and 1/2 teaspoon cracked black pepper to the panko mixture. Finish with a squeeze of lemon juice over the hot mushrooms before serving.
- Herb Garden: Add 1 tablespoon chopped fresh parsley and 1 teaspoon dried thyme to the panko mixture. Swap the dill in the dip for fresh chives.
Storage and make-ahead
- Fridge
- Store leftover mushrooms in an airtight container in the refrigerator for up to 3 days. The dip can be refrigerated in a separate container for up to 3 days.
- Freezer
- Freeze breaded, uncooked mushrooms on a baking sheet until solid, then transfer to a freezer bag for up to 2 months.
- Reheat
- Reheat leftover mushrooms in the air fryer at 375°F (190°C) for 3-4 minutes until hot and crispy. Avoid microwaving, as it makes the crust soggy.

They will soften, so reheat them in the air fryer at 375°F (190°C) for 3-4 minutes to restore some crispness. The dip can be stored separately in a small container for up to 3 days.
The mushrooms can be breaded up to 2 hours ahead and kept in the refrigerator on a plate. Do not spray with oil until just before air frying.
The dip can be made a day in advance and stored in the refrigerator. Let the dip come to room temperature for 10 minutes before serving.
Serving ideas
Serve the blooming mushrooms as a striking appetizer on a wooden board, with the dip in the center. They can be pulled apart petal by petal, making them perfect for sharing. The contrast of the hot, crispy crust and the cool, creamy dip is the highlight.
These mushrooms also work well as a side dish alongside grilled steak or roasted chicken. For a lighter meal, serve them over a green salad. The dip can be doubled if you like extra for drizzling. Garnish with extra fresh dill if desired.

Crispy Air Fryer Blooming Portobello Mushrooms with Garlic Herb Dip

Ingredients
- 3 large portobello mushroom caps
- 80 g all-purpose flour (about 2/3 cup)
- 2 large eggs, beaten with 2 tbsp milk
- 2 tbsp milk
- 100 g panko breadcrumbs (about 2 cups)
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- Olive oil spray, for coating, to taste
- 100 g sour cream (about 1/2 cup)
- 2 garlic cloves, minced
- 1 tbsp fresh dill, chopped
- 1 tbsp lemon juice
Instructions
- Wipe the portobello caps clean with a damp paper towel. Using a sharp knife, score the top of each cap in a deep crosshatch pattern, cutting about 3/4 of the way through the mushroom, but not cutting through the bottom so the cap stays intact and can bloom like a flower. In a shallow bowl, whisk the eggs with the milk until smooth. In a separate shallow dish, combine the panko, garlic powder, smoked paprika, and salt. Place the flour in a third dish.
- Dust each scored mushroom with flour, pressing it into the crevices. Shake off any excess. Dip the floured mushroom into the egg wash, making sure it gets into the cuts. Finally, press the mushroom into the seasoned panko mixture, coating all surfaces and pushing the crumbs into the crevices. Repeat with the remaining mushrooms.
- Preheat the air fryer to 390°F (195°C). Place the coated mushrooms in the air fryer basket in a single layer, leaving space between them. Spray generously with olive oil spray. Air fry for 14 minutes, flipping halfway through, until the crust is deep golden brown and crispy. The internal temperature of the mushrooms should reach at least 160°F (71°C) to ensure the egg coating is fully cooked.
- While the mushrooms cook, prepare the dip. In a small bowl, stir together the sour cream, minced garlic, chopped dill, and lemon juice until smooth. Season with a pinch of salt if desired. Once the mushrooms are done, transfer them to a serving board or plate. Serve hot with the garlic herb dip on the side for dipping.
