Before you start
Start by pressing the tofu: wrap the block in a clean kitchen towel and place a heavy pan on top for at least 10 minutes. While the tofu presses, measure out the cornstarch, olive oil, garlic powder, and salt. Have the buffalo hot sauce and melted butter measured and ready for the glaze.
Preheat the air fryer to 400°F (200°C) so it’s hot when the tofu is ready. Set out the ranch dressing and celery sticks for serving. The entire process moves quickly once the tofu is pressed, so having everything prepped and within reach makes the cooking flow smoothly.
Ingredients at a glance (9)
- 14 oz extra-firm tofu
- 2 tbsp cornstarch
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/3 cup buffalo hot sauce
- 2 tbsp melted butter
- buttermilk ranch dressing, for serving
- celery sticks, for serving
Instructions
Prepare and Air-Fry
- Press and Coat the TofuPress the extra-firm tofu to remove as much water as possible. Wrap the block in a clean kitchen towel and place a heavy pan on top for 10 minutes. Cut the pressed tofu into 1-inch cubes. In a large bowl, toss the cubes with olive oil, garlic powder, salt, and cornstarch until every piece is evenly coated and looks powdery.Look for The cubes should look dry and dusty, with no wet spots.Tip The drier the tofu, the crispier the result. Do not skip pressing.
- Air-Fry the TofuPreheat the air fryer to 400°F (200°C). Arrange the coated tofu cubes in a single layer in the air fryer basket, leaving space between each cube. Cook for 16 minutes, shaking the basket halfway through, until the cubes are puffed, golden amber, and crackling crisp.Look for The tofu should be deep golden and sound crispy when shaken.Tip Do not overcrowd the basket; work in batches if needed.
After pressing and coating, the tofu cubes should look dry and dusty, with a thin, even layer of cornstarch. During air-frying, they will puff up and turn golden amber. The kitchen will smell nutty and toasty.
At the end of this phase, the cubes should be shatteringly crisp and hold their shape when picked up with tongs. If any cubes look pale or soft, return them to the air fryer for a few more minutes.
Make the Glaze
- Make the Buffalo GlazeIn a small bowl, whisk together the buffalo hot sauce and melted butter until smooth and glossy. The mixture should look silky and vibrant fiery orange.Look for The glaze should be emulsified and shiny.Tip Use warm melted butter to help the sauce come together easily.
The glaze should be silky, glossy, and a vibrant fiery orange. The butter and hot sauce should be fully combined, with no visible separation. It should have a rich, tangy aroma with a hint of heat. The glaze will be thin but will thicken slightly as it cools. Set it aside while the tofu finishes cooking.
Toss and Serve
- Toss and ServeTransfer the hot air-fried tofu cubes to a large bowl. Pour the buffalo glaze over the top and toss gently until every cube is coated. Serve immediately with buttermilk ranch dressing and celery sticks on the side for dipping.Look for Each cube should be glossy and coated but still crisp.Tip Toss just before serving to keep the crunch intact.
The hot tofu cubes should be tossed in the glaze until every surface is coated. The glaze will cling to the crispy exterior, creating a shiny, appetizing finish. The cubes should still feel crisp when you bite into them. Serve immediately with ranch and celery, and expect a loud crunch with every bite.
Common mistakes
A common mistake is not pressing the tofu thoroughly, which leaves excess water that steams the cubes and prevents crisping. Another is overcrowding the air fryer basket; the cubes need space for hot air to circulate, so cook in batches if necessary.
Skipping the cornstarch coating results in a softer, less crisp texture. Also, avoid adding the glaze too early—toss the tofu only after it’s fully cooked and still hot, so the sauce adheres without making the exterior soggy. Finally, don’t forget to shake the basket halfway through for even browning.
How to tell it’s done
The tofu is done when the cubes are puffed, deep golden brown, and sound hollow and crisp when shaken in the basket. A gentle squeeze should feel firm and dry on the outside, not spongy. The internal temperature of the tofu is not a safety concern, but the texture should be crunchy on the outside and tender on the inside.
After tossing in the glaze, the coating should cling without making the tofu soggy. If the cubes look pale or soft after 16 minutes, air-fry for an additional 2 to 3 minutes, checking frequently.
