Before you start

Before beginning the cooking process, ensure all ingredients are measured and ready to use, as the searing phase happens quickly.

Julienne the sun-dried tomatoes if they are packed in large pieces, and thoroughly wash and dry the baby spinach. Have your fish spatula and stainless steel skillet positioned near the stove to maintain momentum during the cooking steps.

Ingredients at a glance (6)
  • 4 fillets Atlantic salmon fillets (6 ounces each)
  • 1 tsp sea salt
  • 1/2 cup julienned sun-dried tomatoes
  • 2 cups baby spinach
  • 3/4 cup heavy cream
  • 1/2 cup parmesan cheese

Instructions

Preparation and Scoring

  1. Score and Season
Using a sharp knife, carefully score the salmon skin in a crosshatch pattern to prevent curling during searing. Season the fillets generously with sea salt on all sides. Allow the salmon to sit at room temperature for no more than 15 minutes before cooking.
Look for Skin is scored and seasoned evenly.
Tip Ensure the salmon is completely dry by patting it with paper towels before scoring to achieve maximum crispness.

The salmon should be dry, scored neatly, and seasoned. Having the ingredients prepped at your workstation ensures you can focus entirely on the heat management during the searing phase without distraction.

Searing the Salmon

  1. Sear the Salmon
Heat a stainless steel skillet over medium-high heat until hot. Place the salmon fillets skin-side down in the pan. Sear for 5 minutes without moving them to allow the skin to become crackling crisp. Flip the fillets and cook for another 90 seconds, ensuring the internal temperature reaches 145°F (63°C). Remove the salmon from the pan and let it rest for 5 minutes.
Look for Skin is golden brown and shatters when poked.
Safe temperature 145°F (63°C) internal temperature (fish)
Tip Do not rush the searing process; the skin needs time to render the fat and achieve that signature glass-like texture.

The salmon skin should be golden and crispy, with the flesh cooked through to 145°F (63°C). The fish should feel firm yet buttery, and it must rest for 5 minutes before the sauce is applied.

Sauce Emulsification

  1. Create the Sauce
In the same skillet, add the sun-dried tomatoes, heavy cream, parmesan, and baby spinach. Simmer over medium heat, stirring constantly, until the sauce thickens and the spinach is just wilted. Pour the warm Tuscan sauce over the rested salmon fillets and serve immediately.
Look for Sauce bubbles and thickens to a velvety consistency.
Tip If the sauce thickens too much, add a tablespoon of water or broth to loosen it to the desired creamy consistency.

The cream, parmesan, tomatoes, and spinach should form a cohesive, thick, and velvety sauce.

The spinach should be bright green and just wilted, not overcooked into a mushy consistency. Check that the sauce coats the back of a spoon before serving.

Common mistakes

A common mistake is moving the salmon prematurely while it is searing skin-side down; allow the skin to release naturally from the pan before flipping.

Another error is overcrowding the skillet, which causes the temperature to drop and leads to steaming rather than searing. Ensure there is enough space between fillets so the skin can develop that signature crunch.

How to tell it’s done

The salmon is perfectly cooked when the flesh is opaque and flakes easily with a fork.

Using an instant-read thermometer is the most reliable method to ensure safety; insert it into the thickest part of the fillet to confirm an internal temperature of at least 145°F (63°C). The skin should be deep golden brown and crisp to the touch.

  • Fish: 145°F (63°C) in the thickest part
