Tips for success

For the richest flavor, use a good-quality chicken broth and grate the Parmigiano-Reggiano fresh from a wedge — pre-grated cheese often contains anti-caking agents that can make the sauce grainy.

If you prefer a thicker sauce, mash some of the cannellini beans with a fork before adding them to the slow cooker. This adds body and creaminess without extra dairy. You can also stir in a splash of white wine at the end for brightness, though the video keeps it simple.

To prevent the pasta from overcooking, cook it on HIGH for the final 20 minutes and check it at the 15-minute mark. Every slow cooker runs slightly differently, so adjust the time as needed.

If the sauce becomes too thick, add warm broth a few tablespoons at a time. For a vegetarian version, use vegetable broth and omit the sausage, or replace it with a plant-based sausage that cooks thoroughly. The beans add enough protein to keep it hearty.

Variations

  • Spicy Sausage: Use hot Italian sausage and add a pinch of red pepper flakes with the garlic for extra heat. Finish with extra chili oil.
  • Vegetarian: Omit the sausage and use vegetable broth. Add an extra can of cannellini beans for protein and a meaty texture.
  • Add Mushrooms: Sauté 8 oz sliced cremini mushrooms with the sausage until browned. They add an earthy depth that pairs well with the kale.
  • Creamy Tomato: Stir in 1/2 cup tomato paste with the broth for a richer, more tomato-forward sauce. Reduce the sun-dried tomatoes to 1/4 cup.

Storage and make-ahead

Fridge
Store in an airtight container in the fridge for up to 4 days. Reheat with a splash of broth to restore the creamy texture.
Freezer
Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the fridge and reheat gently, adding broth as needed.
Reheat
Reheat in the microwave in 30-second bursts, stirring between, or in a skillet over medium-low with a splash of broth until hot.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The pasta will continue to absorb sauce, so when reheating, add a splash of chicken broth or water to loosen it. Reheat gently in the microwave or on the stovetop over medium-low heat, stirring frequently, until warmed through. Avoid boiling, which can make the sauce separate.

You can brown the sausage and prep all the ingredients up to a day ahead. Store the sausage in the refrigerator and keep the other components in separate containers. When ready to cook, simply add everything to the slow cooker and proceed.

The dish itself is best served fresh, but leftovers are excellent for lunch the next day. You can also assemble the entire slow cooker (except the pasta and kale) and refrigerate overnight, then start cooking the next morning.

Serving ideas

Serve the rigatoni in deep bowls, spooning extra sauce over the top. A drizzle of chili-infused olive oil adds a gentle heat and a fruity finish, while shaved Parmigiano-Reggiano provides salty, nutty notes.

Pair with a simple green salad and crusty bread to soak up every bit of the creamy sauce. This is a complete meal in itself, but it also shines alongside roasted vegetables or a light arugula salad.

For a family-style dinner, bring the slow cooker to the table and let everyone serve themselves. The dish is hearty enough to be the main event, but you can also serve it as a side to grilled chicken or fish. If you have leftover sauce, it's wonderful over polenta or spooned onto toasted bread. The flavors only get better as they sit, so don't be afraid to enjoy it the next day.

Frequently asked questions

Can the pasta be added at the beginning with everything else?
No, adding the pasta at the beginning will cause it to become mushy and overcooked. The slow cooker's low, moist heat breaks down the pasta's structure over time. Adding it during the last 20 minutes on HIGH ensures it cooks to al dente while still absorbing flavor from the sauce. If you prefer a softer pasta, you can add it a few minutes earlier, but check it frequently to avoid overcooking.
Why does the sauce sometimes look curdled or grainy?
Curdling can happen if the cream cheese is added cold or if the slow cooker temperature is too high. Always cube the cream cheese and let it soften at room temperature before adding. Also, make sure your slow cooker is on LOW, not HIGH, for the initial simmer. Stirring well when you add the cream cheese and again after it melts helps create a smooth sauce. If the sauce does curdle, blending it with an immersion blender can sometimes smooth it out.
Can this recipe be made gluten-free?
Yes, simply use gluten-free rigatoni or another gluten-free pasta shape. Check that the sausage and chicken broth are certified gluten-free, as some brands contain fillers or additives with gluten. The rest of the ingredients — beans, tomatoes, garlic, cream cheese, kale, and Parmesan — are naturally gluten-free. Cook the gluten-free pasta according to the same timing, but test it a bit earlier as some brands cook faster and may become mushy.
How can the dish be made lighter or lower in fat?
Use turkey Italian sausage instead of pork, and reduce the cream cheese to 4 ounces. You can also use low-fat cream cheese, though the sauce may be slightly less rich. Skip the chili oil drizzle and use less Parmesan. The beans add fiber and protein, making it satisfying without extra fat. Keep in mind that the texture and flavor will change somewhat, but it will still be delicious.
Can the dish be frozen after cooking?
Yes, the dish freezes well for up to 3 months. Let it cool completely, then transfer to a freezer-safe container. To reheat, thaw overnight in the refrigerator and warm gently on the stovetop or microwave, adding a splash of broth to loosen the sauce. Note that the pasta will soften further upon reheating, so it's best to slightly undercook the pasta if you plan to freeze leftovers.

Prep 15 minCook 3 h 15 minTotal 3 h 30 minServes 6
A rustic bowl of creamy rigatoni with sausage and kale, drizzled with chili oil.

Ingredients

  • 1 lb sweet Italian sausage, casings removed
  • 15 oz cannellini beans, drained and rinsed
  • 1/2 cup sun-dried tomatoes, chopped
  • 4 cloves garlic, minced
  • 2 1/2 cups chicken broth
  • 8 oz cream cheese, softened and cubed
  • 4 cups chopped Lacinato kale, stems removed
  • 16 oz rigatoni pasta
  • 1 cup grated Parmigiano-Reggiano
  • Chili-infused olive oil, for drizzling, to taste
  • Shaved Parmigiano-Reggiano, for serving

Instructions

  1. Heat a large skillet over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned and cooked through, about 6 to 8 minutes. Transfer the sausage to the slow cooker.
  2. Add the cannellini beans, sun-dried tomatoes, garlic, chicken broth, and cream cheese to the slow cooker. Stir to combine.
  3. Cover the slow cooker and cook on LOW for 3 hours. The sauce will become creamy and the flavors will meld.
  4. After 3 hours, stir in the rigatoni and chopped kale. Cover and cook on HIGH for 20 to 25 minutes, or until the pasta is al dente and the kale is wilted. Stir once halfway through.
  5. Turn off the slow cooker. Stir in the grated Parmigiano-Reggiano until melted and the sauce is velvety.
  6. Spoon the rigatoni into bowls. Drizzle with chili-infused olive oil and top with shaved Parmigiano-Reggiano.
