Tips for success
To add a touch of brightness to the richness, finish the dish with a squeeze of fresh lemon juice or a sprinkle of fresh chopped parsley immediately before serving.
This acidity cuts through the heavy cream and Parmigiano, balancing the flavors and making each bite feel lighter and more refined. You can also add a pinch of red pepper flakes during the searing phase if a hint of heat is desired.
If you prefer a more intense garlic flavor, consider rubbing the inside of the hollowed ciabatta with a raw, peeled garlic clove before brushing it with the butter.
This simple step infuses the bread with an extra layer of sharp garlic notes that pairs exceptionally well with the creamy shrimp. Ensure the shrimp are distributed evenly among the bread boats so every serving has a generous portion of protein and sauce.
Variations
- Spicy Tuscan Boats: Add one teaspoon of crushed red pepper flakes to the skillet when cooking the garlic to introduce a subtle, warming heat that complements the rich cream sauce perfectly.
- Sun-Dried Tomato Version: Replace half of the fresh cherry tomatoes with chopped sun-dried tomatoes for an intense, concentrated sweetness and a deeper color profile that pairs beautifully with the parmesan.
Storage and make-ahead
- Fridge
- Keep leftovers in an airtight container for up to 2 days. The bread will soften significantly, so expect a different texture.
- Reheat
- Reheat in a preheated 350°F (175°C) oven for 5 to 8 minutes until the bread is crisp and the center is heated through.
Store any leftovers in an airtight container in the refrigerator for up to 2 days. Because the bread will continue to absorb the sauce over time, it is best to consume this dish as soon as possible after assembly.
To maintain the best texture, keep the bread and the creamy shrimp mixture separate if you anticipate having leftovers, though this is best enjoyed fresh from the oven.
You can prepare the shrimp scampi sauce up to one day in advance and store it in the refrigerator. When ready to serve, gently reheat the sauce on the stove, adding a splash of cream or wine if it has thickened too much.
Toast the ciabatta boats just before serving to ensure they are crisp, then assemble and broil as directed in the final phase for the best results.
Serving ideas
Serve these ciabatta boats hot, ideally placed on a large platter with a side of crisp green salad to balance the richness of the cream sauce. Each bread boat acts as an individual serving, making them perfect for casual dinners where guests can easily pick up their portion. Ensure that each boat is served on a small plate to catch any sauce that might spill over.
Pair this dish with a glass of dry, crisp white wine, such as a Sauvignon Blanc or Pinot Grigio, which complements the garlic and seafood notes. The acidity of the wine will cleanse the palate between bites of the decadent parmesan cream. For a more complete meal, consider serving alongside roasted vegetables or a light pasta dish to round out the experience.

Creamy Tuscan Garlic Shrimp Ciabatta Boats

Ingredients
- 12 count jumbo shrimp, peeled
- 6 cloves garlic cloves, sliced
- 1/2 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 1/2 cup heavy cream
- 1/4 cup white wine
- 1/2 cup Parmigiano cheese, grated
- 4 small ciabatta loaves, hollowed out
- 2 tbsp garlic herb butter, melted
- 1/2 cup shredded mozzarella cheese
Instructions
- Preheat the oven to 400°F (204°C). Use a serrated knife to cut the top off each small ciabatta loaf and scoop out the soft interior to create a boat. Brush the inside and outside of the hollowed bread with melted garlic herb butter. Place the prepared loaves on a baking sheet and toast in the oven for 6 minutes until lightly golden and crispy.
- Heat a large skillet over medium heat. Add the peeled jumbo shrimp and sear until they begin to turn opaque. Stir in the sliced garlic cloves and halved cherry tomatoes, cooking until the garlic is fragrant and the tomatoes soften. Pour in the white wine and allow it to reduce slightly. Stir in the heavy cream and spinach, simmering until the sauce thickens. Finally, stir in the grated Parmigiano cheese until melted and smooth.
- Carefully pour the hot, bubbling Tuscan shrimp scampi mixture into the toasted ciabatta boats. Sprinkle the tops evenly with shredded mozzarella cheese. Place the filled boats back into the oven under the broiler for 2 minutes or until the cheese is melted, bubbly, and slightly browned. Serve immediately while the sauce is hot and the bread is crunchy.
