Tips for success

For a more vibrant flavor, add a handful of fresh spinach during the final ten minutes of cooking. The residual heat will wilt the greens perfectly without making them soggy, adding a touch of color and freshness to the rich, creamy sauce. This simple addition elevates the overall presentation and nutritional variety of the meal.

If you prefer a thinner sauce, stir in a small amount of vegetable broth or heavy cream after the initial cooking phase. This allows you to adjust the consistency to your personal preference without compromising the flavor.

Always add liquids gradually, stirring well between additions to ensure the sauce maintains its smooth, emulsified texture throughout.

Variations

  • Spicy Tomato Tortellini: Add a teaspoon of crushed red pepper flakes or a dash of hot sauce during the seasoning step to introduce a pleasant heat that cuts through the creaminess of the cheese.
  • Vegetable-Packed Tortellini: Incorporate half a cup of frozen peas or sautéed mushrooms along with the tortellini to add texture and earthy depth, making the meal even more substantial and filling.

Storage and make-ahead

Fridge
Keep refrigerated in an airtight container for up to three days.
Freezer
Freezing is not recommended as the cream cheese sauce may separate and the pasta texture can become compromised upon thawing.
Reheat
Reheat gently on the stovetop over low heat, adding a splash of water or milk to restore the creamy consistency of the sauce.

Store any leftovers in an airtight container to keep the pasta from drying out. Place the container in the refrigerator immediately after the food has cooled to room temperature, ensuring it does not sit out for longer than two hours. Proper storage helps maintain the quality and safety of the creamy sauce for several days.

This dish is excellent for make-ahead planning. You can assemble the ingredients in the slow cooker insert, cover it, and keep it in the refrigerator overnight.

When ready to cook, simply place the insert into the slow cooker base and add fifteen to twenty minutes to the total cooking time to account for the cold starting temperature.

Serving ideas

Serve this creamy tortellini hot, directly from the slow cooker to ensure the sauce remains at its best consistency.

It pairs beautifully with a crisp, simple green salad tossed in a light vinaigrette, which helps balance the richness of the creamy tomato sauce. Consider offering a side of toasted garlic bread to soak up any remaining sauce in the bowl.

Present the dish in shallow bowls to showcase the melted mozzarella topping. If you have guests, a light garnish of fresh basil or a pinch of red pepper flakes can provide a professional finish.

Keep a serving spoon nearby so guests can easily scoop up the pasta along with the delicious, velvety sauce from the bottom of the cooker.

Frequently asked questions

Can this recipe be made with dried tortellini instead of frozen?
Yes, dried tortellini can be used, but it may require a slightly longer cooking time. Check the package instructions for the recommended boil time and adjust the slow cooker duration accordingly to ensure the pasta is tender.
How can the sauce be prevented from becoming too thick?
If the sauce thickens too much during the cooking process, simply stir in a few tablespoons of water, vegetable broth, or milk. This will loosen the consistency and ensure the sauce remains smooth and creamy.
Is it possible to use different types of cheese?
While mozzarella is recommended for its melting properties, you can experiment with other cheeses like provolone or fontina. These varieties offer similar melting characteristics and will blend well with the tomato and cream cheese base.

Ingredients

  • 20 oz frozen cheese tortellini
  • 28 oz canned diced tomatoes
  • 1 packet italian seasoning packet
  • 8 oz cream cheese block
  • 1 cup shredded mozzarella cheese

Instructions

  1. Place the frozen cheese tortellini into the bottom of the slow cooker basin. Pour the entire contents of the canned diced tomatoes over the pasta. Sprinkle the italian seasoning packet evenly across the top of the tomatoes, then place the block of cream cheese directly in the center.
  2. Cover the slow cooker with its lid and set to cook on low for two hours. During this time, the cream cheese will soften and melt into the tomatoes, creating a thick, velvety sauce that coats the tortellini evenly as it cooks through.
  3. Once the pasta is cooked and the sauce is smooth, remove the lid and stir the mixture thoroughly until the cream cheese is fully incorporated. Top with the shredded mozzarella cheese and let it sit for a few minutes until melted. Serve immediately while hot.
