Tips for success

For an even deeper flavor profile, you can sear the beef short ribs in a hot pan before adding them to the slow cooker. While not strictly necessary for this recipe, browning the meat adds a layer of caramelized flavor that enhances the richness of the final curry.

If you choose to do this, ensure the pan is very hot and sear the beef quickly on all sides, being careful not to cook it through before it enters the slow cooker.

Adjusting the heat level is easy with this recipe. If you enjoy a bit of extra heat, you can add a pinch of dried red chili flakes or a small amount of fresh minced chili when you add the curry paste.

Conversely, if you prefer a milder profile, you can increase the amount of coconut milk slightly or add an extra tablespoon of palm sugar to balance the spice. Always taste your curry base before cooking to ensure it meets your specific preferences.

Variations

  • Chicken Massaman: Replace the beef short ribs with 3 pounds of boneless, skinless chicken thighs. Reduce the cooking time to 4 hours on low to ensure the chicken stays tender and does not dry out.
  • Vegetable Massaman: Omit the beef and add a mix of hearty vegetables such as carrots, sweet potatoes, and bell peppers. Reduce the liquid slightly and cook on low for 3 to 4 hours.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days. Ensure it is refrigerated within 2 hours of cooking.
Freezer
Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat gently in a saucepan over low heat or in the microwave, stirring occasionally until heated through to 165°F (74°C).

If you have leftovers, allow the curry to cool completely for no more than 2 hours at room temperature before transferring it into airtight containers. Proper storage in the refrigerator will keep the flavors fresh for up to 3 days. When storing, try to keep the beef and the sauce together to ensure the meat stays moist and continues to absorb the flavors of the curry base even while in the refrigerator.

This dish is an excellent candidate for making ahead, as the flavors often improve after sitting for a day. You can prepare the entire curry up to two days in advance and store it in the refrigerator.

When you are ready to serve, simply reheat it gently on the stove or in the microwave. This makes it an ideal choice for busy weeknights or for hosting guests, as you can have a gourmet meal ready to go with minimal effort.

Serving ideas

When serving, present the curry in shallow bowls to showcase the beautiful colors of the Massaman sauce and the tender beef. A generous scoop of steamed jasmine rice is the traditional accompaniment, serving as a perfect canvas for the thick, aromatic curry sauce. Ensure each serving includes a good portion of the baby potatoes and a generous ladle of the rich, velvety liquid from the slow cooker.

To elevate the presentation, sprinkle the crushed roasted peanuts just before serving to maintain their texture. Adding a few fresh Thai basil leaves adds a vibrant pop of color and a fresh, herbal note that cuts through the richness of the coconut milk.

You can also offer additional peanuts and lime wedges on the side for guests to customize their bowls according to their personal preference for texture and brightness.

Frequently asked questions

Can this curry be made in a pressure cooker?
Yes, this recipe can be adapted for a pressure cooker. Follow the same layering instructions and cook on high pressure for 45 minutes, followed by a natural release. This will result in similarly tender beef in a fraction of the time.
Why does the curry sauce look oily?
The separation of the coconut cream into oil is a sign of a high-quality, authentic curry. It happens when the coconut milk is cooked for a long period, allowing the fats to render. It is considered a desirable trait in Thai curries.
What is the best way to crush the peanuts?
Place the roasted peanuts in a plastic bag and use a rolling pin or a heavy skillet to gently crush them. This method gives you control over the texture, allowing you to achieve everything from large chunks to a finer crumb.
