Tips for success

For an extra layer of flavor, consider sautéing a small amount of diced onions or bell peppers with the ground beef. This adds sweetness and texture to the base of your sauce. If you prefer a smokier profile, a dash of smoked paprika or chipotle powder can be added to the taco seasoning mix before simmering, which deepens the complexity of the final dish.

If you are serving this to a crowd, keep the heat very low after the pasta is cooked to maintain the temperature without overcooking the sauce. You can also garnish the dish with fresh ingredients like diced tomatoes, shredded lettuce, or fresh herbs right before serving to add a fresh, cooling contrast to the warm, savory pasta and meat mixture.

Variations

  • Spicy Taco Pasta: Add diced jalapeños or a tablespoon of hot sauce during the simmering phase to give the dish a significant kick. This variation is perfect for those who enjoy a bit of heat with their savory meals.
  • Veggie-Packed Taco Pasta: Stir in a cup of frozen corn or black beans during the final minutes of simmering. These additions provide extra texture and color, making the dish even more hearty and satisfying.

Storage and make-ahead

Fridge
Store in the refrigerator for up to 3 days in a tightly sealed container.
Freezer
Freezing is not recommended as the sauce texture may change upon thawing.
Reheat
Reheat gently on the stovetop over low heat, adding a splash of water to loosen the sauce.

Transfer any leftovers to an airtight container once they have cooled to room temperature, which should take no more than two hours. Place the container in the refrigerator immediately to maintain food safety and quality.

The pasta will absorb more of the sauce as it sits, so it may need a small splash of water or broth when you are ready to reheat it to restore the original creamy consistency.

While this dish is best served fresh, you can prepare the meat sauce base ahead of time and keep it in the refrigerator. When you are ready to eat, bring the sauce back to a simmer, add the pasta and the required liquid, and finish the cooking process as described.

This saves significant time during the week while ensuring the pasta remains fresh and perfectly cooked when you are ready to serve.

Serving ideas

Serve this creamy taco pasta in wide, shallow bowls to showcase the beautiful, glossy sauce. A side of crisp, fresh vegetables or a simple garden salad provides a nice crunch that balances the richness of the pasta.

If desired, offer additional toppings or a sprinkle of fresh herbs on the side so that each person can customize their bowl to their own preference.

Because this is a hearty, one-pan meal, it stands perfectly on its own. If you want to expand the menu, serve it alongside some warm flour tortillas or crusty bread to help scoop up any remaining sauce at the bottom of the bowl.

Ensure the pasta is served hot, as the sauce is most luxurious and velvety when served immediately after the initial resting period.

Frequently asked questions

Can this be made with a different type of pasta?
Yes, other short pasta shapes like rotini, penne, or bowties work well. Ensure you adjust the cooking time based on the pasta package instructions to achieve an al dente texture.
What is the best way to prevent the sauce from becoming too thick?
If the sauce thickens too much, add a small amount of water or beef broth. Stirring occasionally during the simmering process helps monitor the consistency and prevents the pasta from sticking.
Does this dish reheat well?
It reheats well on the stovetop. Because the pasta absorbs liquid as it sits, add a splash of water or broth when reheating to bring back the creamy, velvety texture of the sauce.

Creamy Taco Pasta for an Easy One-Pan Dinner

A steaming bowl of creamy taco pasta with large shells and a rich meat sauce.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 14.5 oz diced tomatoes
  • 1 lb large pasta shells

Instructions

  1. Place a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned and no longer pink. Ensure the internal temperature reaches 160°F (71°C) to ensure it is cooked through. Drain any excess fat from the skillet before proceeding to the next step.
  2. Stir in the taco seasoning, diced tomatoes, and pasta shells. Add enough water to barely cover the pasta. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer until the pasta is tender and most of the liquid has been absorbed, stirring occasionally to prevent sticking.
  3. Remove the skillet from the heat. Stir the mixture until the sauce becomes smooth, glossy, and coats the pasta shells. Let the dish rest for 5 minutes before serving to allow the sauce to thicken slightly and coat the pasta shells perfectly.
