Tips for success
For the best flavor, use aged Swiss cheese like Gruyère — it melts beautifully and adds a nutty, complex taste.
If you don't have Swiss, white cheddar or mozzarella can work, but the flavor will be milder. Also, be generous with the spinach — it wilts down significantly, so a few cups will reduce to almost nothing.
To make this dish even easier, you can assemble everything in the slow cooker insert the night before and refrigerate it. In the morning, simply place the insert in the slow cooker and turn it on.
This makes it a true dump-and-go meal for busy mornings. Just be sure to add an extra 30 minutes to the cooking time if starting from cold.
Variations
- Add Bacon: Cook 4 slices of bacon until crisp, crumble, and stir into the finished dish for a smoky, salty crunch. Sprinkle extra bacon on top before serving.
- Make It Spicy: Add 1/2 teaspoon of red pepper flakes or a dash of hot sauce to the sour cream mixture for a subtle kick. Or top with sliced jalapeños before serving.
- Use Chicken Breasts: Substitute boneless, skinless chicken breasts for the thighs, but reduce the cooking time to 2-3 hours on low to avoid drying out. Shred as directed.
- Add Mushrooms: Sauté 8 oz sliced mushrooms in butter until golden, then add them to the slow cooker with the spinach for an earthy, savory depth.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth or milk if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbling. Or microwave in 30-second intervals, stirring between each.
Store any leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day. Reheat gently on the stovetop or in the microwave, adding a splash of chicken broth or milk if the sauce has thickened too much.
This dish can be assembled up to 24 hours in advance. Layer all the ingredients in the slow cooker insert, cover, and refrigerate. When ready to cook, place the insert in the slow cooker and cook on low for 5-6 hours (add 30 minutes if starting from cold). This is perfect for meal prep or entertaining.
Serving ideas
Serve this creamy chicken over a bed of mashed potatoes for a classic, comforting combination. The velvety sauce soaks into the potatoes, making every bite rich and satisfying.
Alternatively, serve over cooked rice, egg noodles, or with crusty bread to soak up the sauce. A simple green salad on the side adds a fresh contrast.
For a lighter option, spoon the chicken mixture over steamed vegetables like broccoli or green beans. You can also serve it stuffed into baked potatoes or as a filling for crepes.
The dish is versatile and can be adapted to whatever you have on hand. Garnish with a sprinkle of fresh parsley or chives if desired.

Creamy Swiss Spinach Artichoke Chicken Thighs

Ingredients
- 2 lb boneless skinless chicken thighs
- 4 cups fresh baby spinach
- 1 can (14 oz) artichoke hearts, drained and quartered
- 1 can (10.5 oz) condensed cream of chicken soup
- 1 cup sour cream
- 1 1/2 cups shredded aged Swiss cheese
Instructions
- Place the boneless skinless chicken thighs evenly across the bottom of a 6-quart slow cooker. Scatter the fresh baby spinach and quartered artichoke hearts over the chicken. Spoon the condensed cream of chicken soup over the top, spreading it gently to cover some of the ingredients.
- Dollop the sour cream over the top of the soup layer, then scatter the shredded aged Swiss cheese evenly over everything. Do not stir.
- Cover the slow cooker and cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours, until the chicken thighs are tender and reach an internal temperature of 165°F (74°C). The sauce will be bubbling around the edges.
- Once the chicken is cooked through, use two forks to shred the thighs directly in the slow cooker. Stir everything together so the spinach is wilted, the artichokes are coated, and the sauce is smooth and creamy.
- Spoon the creamy chicken mixture over warm mashed potatoes on a plate. Serve immediately, with extra sauce spooned over the top.
