Before you start

Before starting, ensure all ingredients are ready. If the chicken has been in the refrigerator, take it out about 15 minutes before cooking so it is not ice-cold, which helps it cook more evenly.

Wash and dry the mushrooms thoroughly if you are slicing them yourself. Ensure you have a clean workspace and your slow cooker is placed on a stable, heat-resistant surface away from any water sources or flammable materials.

Ingredients at a glance (4)
  • 4 pieces chicken breasts
  • 8 oz sliced white mushrooms
  • 1 tsp garlic powder
  • 10 oz condensed cream of mushroom soup

Instructions

Layering the ingredients

  1. Prepare the Slow Cooker
Place the raw chicken breasts into the bottom of the slow cooker. Ensure they are laid out in a single layer to promote even cooking throughout the process.
Look for chicken is evenly distributed
Tip Keep the chicken cold in the refrigerator until the very last moment before placing it in the slow cooker.

The chicken should be at the bottom of the slow cooker in a single layer. The mushrooms should be scattered evenly over the top, followed by the garlic powder and a layer of creamy soup. Everything should look ready for the long, slow heat to begin working its magic on the proteins and vegetables.

Simmering to tenderness

  1. Add Aromatics and Sauce
Scatter the sliced white mushrooms over the chicken. Sprinkle the garlic powder evenly over the mushrooms and chicken, then pour the condensed cream of mushroom soup over the top to coat everything.
Look for soup covers the mushrooms
Tip Use a spatula to spread the soup if it does not cover the ingredients completely.

During the cooking phase, the kitchen will begin to smell savory and earthy. The mushrooms will shrink slightly, releasing their moisture into the soup.

Check that the liquid is bubbling gently around the edges of the pot. The chicken will look white and firm, and the sauce will appear smooth and well-integrated.

Final finish and resting

  1. Slow Cook and Serve
Cover and cook on low for 4 to 6 hours. Check that the chicken reaches an internal temperature of 165°F (74°C). Allow the chicken to rest for 5 minutes before serving to ensure it remains juicy.
Look for chicken is tender and sauce is creamy
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Ensure the lid is fully closed to maintain the heat and moisture inside the pot.

The chicken should be perfectly cooked and tender, with the mushroom sauce clinging to it. The final dish should be steaming hot. Ensure you allow the chicken to rest for a few minutes before transferring it to plates, which helps the juices redistribute throughout the meat, ensuring every bite is moist.

Common mistakes

Avoid lifting the lid of the slow cooker frequently, as this releases heat and steam, significantly increasing the cooking time. Another common mistake is overcrowding the pot with too many ingredients, which can prevent the sauce from reaching the proper consistency.

Finally, do not forget to check the internal temperature of the chicken; guessing the doneness based on time alone can lead to overcooked, dry meat.

How to tell it’s done

The chicken is done when it is opaque throughout and reaches an internal temperature of 165°F (74°C) as measured by a meat thermometer inserted into the thickest part of the breast.

The sauce should be thickened and glossy, coating the back of a spoon. If the chicken feels firm but tender to the touch, it is ready. Always let it rest for at least 5 minutes before slicing.

  • Poultry: 165°F (74°C) in the thickest part
