Tips for success
For the best flavor, use aged Swiss cheese — it has a sharper, nuttier taste that stands up to the creamy sauce. If you can only find regular Swiss, add a tablespoon of Dijon mustard to the sour cream for an extra kick. Do not skip trimming the green beans; the stem ends are tough and unpleasant to eat.
The slow cooker cooking time is a range because turkey breast sizes vary. Start checking at 4 hours. If the sauce is too thin at the end, remove the lid and cook on HIGH for 15–20 minutes to reduce.
If it is too thick, add a splash of chicken broth. Always let the turkey rest for 5 minutes after shredding to reabsorb the juices.
Variations
- Mushroom and Thyme: Add 8 oz sliced mushrooms and 1 tsp dried thyme to the slow cooker with the turkey. The mushrooms release extra moisture and add an earthy flavor that pairs beautifully with the Swiss cheese.
- Crispy Onion Topping: After shredding the turkey, sprinkle the top with crispy fried onions and cook uncovered for 10 more minutes. The crunchy topping adds texture and a savory onion punch.
- Bacon and Chive: Crumble 4 slices of cooked bacon over the finished dish, along with a handful of chopped fresh chives. The smoky bacon and fresh chives brighten the creamy sauce.
- Spicy Southwest: Stir 1 tbsp chopped chipotle in adobo sauce into the sour cream before adding it to the slow cooker. Serve with sliced jalapeños and a squeeze of lime for a smoky, spicy twist.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. The sauce will thicken; add a splash of broth when reheating.
- Freezer
- Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently in a saucepan over low heat, stirring often, or in the microwave in 30-second bursts. Add a splash of broth to loosen the sauce if needed.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The sauce will thicken as it cools; add a splash of broth or water when reheating to loosen it.
Reheat gently in the microwave or on the stovetop, stirring occasionally, until heated through. The green beans will soften further, but the flavors will still be excellent.
This dish is ideal for meal prep. Assemble everything in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed.
If the insert is cold, add 30 minutes to the cooking time. You can also cook the full dish, cool it, and refrigerate for up to 3 days.
Serving ideas
Serve the turkey and green beans over creamy mashed potatoes, rice, or buttered egg noodles. The sauce is rich enough to double as a gravy, so spoon it generously over the starch.
A side of crusty bread is perfect for soaking up every last drop. This is a complete meal in one bowl, but a simple green salad with a vinaigrette would brighten it up.
For a lower-carb option, serve over cauliflower mash or steamed broccoli. The dish also works well as a filling for savory crepes or as a topping for baked potatoes. If you have leftovers, they make a fantastic open-faced sandwich on toasted sourdough. The creamy, savory sauce makes it endlessly versatile.

Slow Cooker Swiss Green Bean Turkey Breast

Ingredients
- 1 1/2 lb boneless skinless turkey breast cutlets
- 1 lb fresh French green beans, trimmed
- 1 can (10.5 oz) condensed cream of onion soup
- 1/2 cup sour cream
- 1 cup shredded aged Swiss cheese
Instructions
- Place the turkey breast cutlets in the bottom of a 7-quart slow cooker in a single layer. Scatter the trimmed green beans over and around the turkey, tucking them between the pieces so they are mostly covered by the liquid as it cooks.
- Dollop the condensed cream of onion soup over the turkey and green beans. Spread it gently with a spoon or spatula, but do not stir everything together — the soup will melt and create the sauce as it cooks.
- Spoon the sour cream over the soup, then sprinkle the shredded Swiss cheese evenly across the top. Do not stir. Cover the slow cooker with the lid.
- Set the slow cooker to LOW and cook for 4 to 5 hours, or until the turkey breast reaches an internal temperature of 165°F (74°C) and shreds easily with a fork. The sauce will be bubbling gently around the edges.
- Using two forks, shred the turkey breasts directly in the slow cooker. Stir the shredded turkey into the sauce and green beans so everything is coated. Let it sit for 5 minutes to absorb the sauce.
- Spoon the creamy turkey and green bean mixture over warm mashed potatoes on individual plates. The sauce will pool around the potatoes, soaking into them as you eat.
