Before you start

Before you begin, gather all your ingredients and equipment. Trim the woody ends from the asparagus and cut them into 2-inch pieces if you prefer smaller bites. Shred the Swiss cheese from a block if you are not using pre-shredded. Have your slow cooker ready and plugged in.

There is no need to preheat or grease the insert for this recipe. You will also want to prepare your mashed potatoes ahead of time or have them ready to warm up when the chicken is done, so everything is hot and ready to serve together.

Ingredients at a glance (6)
  • 1 1/2 lb boneless skinless chicken thighs
  • 1 lb fresh asparagus spears, trimmed
  • 1 can (10.5 oz) condensed cream of celery soup
  • 1/2 cup sour cream
  • 1 1/2 cups shredded Swiss cheese
  • Whipped Yukon Gold mashed potatoes, for serving

Instructions

Layer the Ingredients

  1. Layer the Chicken and Asparagus
Place the chicken thighs evenly across the bottom of the slow cooker. Scatter the trimmed asparagus spears over the chicken, spreading them out so they are not piled too high.
Look for The chicken covers the bottom in a single layer, with asparagus scattered on top.
Tip Trim the woody ends of the asparagus before adding; they will soften but stay tender-crisp.
  2. Add the Soup and Sour Cream
Spoon the condensed cream of celery soup over the asparagus, then dollop the sour cream on top. Use a spoon to gently spread the soup and sour cream over the ingredients without stirring.
Look for The soup and sour cream form a thick, uneven layer over the chicken and asparagus.
Tip No need to stir; the slow cooker will blend the sauce as it cooks.
  3. Top with Swiss Cheese
Sprinkle the shredded Swiss cheese evenly over the top of the soup and sour cream mixture.
Look for The cheese covers the surface in a snowy layer.
Tip Use freshly shredded cheese for the smoothest melt.

At the end of this phase, you should have a slow cooker filled with raw chicken thighs, a layer of asparagus, and a thick topping of soup, sour cream, and shredded cheese.

It will look like a chaotic pile of ingredients, but that is exactly what you want. The cheese is still shredded and distinct, and the soup and sour cream are in separate dollops. Do not stir—the layers are key to the final texture.

Slow-Cook to Tender

  1. Cover and Cook on Low
Cover the slow cooker and cook on low for 4 hours, or until the chicken is fork-tender and registers 165°F (74°C) in the thickest part. The asparagus should be tender but still bright green.
Look for The sauce is bubbling gently around the edges, and the chicken is easily shredded with a fork.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Resist lifting the lid; each peek adds cooking time.
  2. Shred the Chicken
Using two forks, gently shred the chicken thighs into large pieces right in the slow cooker. Stir the sauce gently to coat the chicken and asparagus.
Look for The chicken pulls apart easily and the sauce clings to the meat and vegetables.
Tip Keep the shreds chunky for a heartier texture.

After 4 hours on low, the kitchen will smell rich and savory. The sauce will be bubbling gently around the edges, and the cheese will be fully melted into a glossy, creamy mixture. The chicken should be easily pierced with a fork and shred without resistance. The asparagus will have darkened slightly but should still be bright green. This is the moment to taste and adjust seasoning if needed.

Shred and Serve

  1. Serve Over Mashed Potatoes
Spoon a generous portion of the creamy chicken and asparagus mixture over warm whipped Yukon Gold mashed potatoes on individual plates.
Look for The sauce pools around the potatoes, and the chicken and asparagus are piled high.
Tip Mashed potatoes soak up the sauce beautifully; serve immediately.

Once you have shredded the chicken and stirred the sauce, the dish is ready to serve. The sauce should coat the back of a spoon, and the chicken and asparagus should be evenly distributed. The final consistency is thick and velvety, not soupy. Spoon it over mashed potatoes and enjoy the sight of the sauce pooling around the creamy potatoes.

Common mistakes

One common mistake is lifting the lid to check on the food. Every time you do, you release heat and add 20 to 30 minutes to the cooking time. Trust the process and wait until the 4-hour mark.

Another pitfall is using pre-shredded cheese, which often contains anti-caking agents that prevent smooth melting. For the silkiest sauce, shred your own cheese. Finally, do not skip trimming the asparagus—woody ends will ruin the texture of the dish.

How to tell it’s done

The dish is done when the chicken thighs are fork-tender and have reached an internal temperature of 165°F (74°C) in the thickest part. The asparagus should be tender but still offer a slight resistance when pierced with a fork, and the sauce should be bubbly and thickened.

The cheese will be fully melted and blended into the sauce. If you are using chicken breasts, check the temperature earlier, around the 3-hour mark, to prevent overcooking.

  • Poultry: 165°F (74°C) in the thickest part
