Tips for success
For the best texture, cut the zucchini into uniform dice so they cook evenly. If the vegetables release too much liquid, the casserole may be slightly loose; cook a little longer to help it set.
Using full-fat cream and cheese gives the richest, most satisfying result. For a golden top, you can transfer the cooked casserole to a baking dish and broil for 2-3 minutes, but this is optional.
This casserole is versatile: add cooked bacon, diced ham, or sautéed onions for extra flavor. For a spicier version, stir in a pinch of red pepper flakes or a diced jalapeño.
Fresh herbs like thyme or chives can replace or complement the basil. The recipe is forgiving, so feel free to adjust the cheese proportions to taste.
Variations
- Add Bacon: Cook 4 slices of bacon until crisp, crumble, and stir into the vegetable mixture before cooking. The smoky flavor complements the sweet corn and cheese beautifully.
- Spicy Kick: Add 1/2 teaspoon red pepper flakes or one finely diced jalapeño with the vegetables. For extra heat, use pepper jack cheese in place of provolone.
- Herb Swap: Replace the fresh basil garnish with chopped chives, thyme, or parsley. You can also stir 1 tablespoon of fresh herbs into the egg mixture before cooking.
- Veggie Boost: Stir in 1 cup of diced bell peppers or sautéed mushrooms along with the zucchini and corn. This adds color and extra vegetables without changing the cooking time.
Storage and make-ahead
- Fridge
- Keep in an airtight container in the fridge for up to 4 days. Reheat in the microwave or on the stovetop until hot.
- Freezer
- Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the fridge before reheating.
- Reheat
- Reheat individual portions in the microwave for 1-2 minutes or in a skillet over medium heat, stirring occasionally, until heated through.
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently in the microwave or in a skillet over medium heat until warmed through. The casserole can also be frozen for up to 2 months; thaw overnight in the refrigerator before reheating.
Assemble the casserole up to 24 hours in advance, cover, and refrigerate. When ready to cook, add about 15-20 minutes to the cooking time because the ingredients start cold.
The casserole can also be fully cooked, cooled, and refrigerated, then reheated in the slow cooker or oven.
Serving ideas
Serve this casserole as a vegetarian main with a crisp green salad and crusty bread, or as a side dish alongside grilled chicken, steak, or fish.
It pairs beautifully with summer cookouts and potlucks because it stays warm in the slow cooker. Garnish generously with fresh basil and parmesan right before serving for the brightest flavor.
For a heartier meal, top each serving with a dollop of sour cream or a sprinkle of smoked paprika. The casserole also reheats well for leftovers, making it a great make-ahead lunch. It is equally delicious at room temperature, so it works for buffets and picnics.

Cheesy Zucchini Corn Casserole in the Crockpot

Ingredients
- 4 cups diced zucchini (about 4 medium)
- 3 cups sweet corn kernels (fresh or frozen, thawed)
- 4 tbsp garlic herb butter, melted
- 1 1/2 cups shredded provolone cheese
- 1/2 cup grated parmesan cheese
- 2 large eggs, lightly beaten
- 1/2 cup heavy cream
- Fresh basil leaves, for garnish, to taste
- Grated parmesan, for garnish, to taste
Instructions
- Lightly grease the insert of a 6-quart slow cooker with butter or nonstick spray. Place the diced zucchini and sweet corn kernels directly into the Crockpot, spreading them into an even layer.
- Sprinkle the shredded provolone and grated parmesan over the vegetables. Use a spoon to toss everything gently so the cheese is distributed throughout the zucchini and corn.
- In a small bowl, whisk the eggs and heavy cream together with the melted garlic herb butter until well combined. Pour the mixture evenly over the vegetables and cheese in the slow cooker.
- Stir the entire mixture thoroughly with a large spoon, making sure the egg-cream mixture reaches the bottom and the cheeses are evenly incorporated. Smooth the top with the spoon.
- Cover the slow cooker with the lid and cook on HIGH for 2 1/2 hours. Do not lift the lid during the first 2 hours, as the heat escapes and slows cooking.
- After 2 1/2 hours, carefully remove the lid. The casserole should be puffed, golden on the edges, and the center should be set when gently shaken. The internal temperature of the egg mixture should reach 160°F (71°C).
- Spoon the hot casserole directly from the slow cooker onto plates or a serving platter. Garnish each serving with fresh basil leaves and a sprinkle of grated parmesan. Serve warm.
