Tips for success

For an extra layer of flavor, consider adding a dash of smoked paprika or a pinch of cayenne pepper to the seasoning mix. These additions provide a subtle warmth that complements the sweetness of the squash and the sharpness of the cheddar cheese without overpowering the dish. Adjust the quantities to suit your personal preferences for heat and depth.

If you prefer a more golden topping, you can transfer the casserole to a baking dish after the slow-cooking process and place it under a broiler for one to two minutes after adding the cracker crumbs. Keep a close watch on the crackers to prevent them from burning, as they will brown very quickly under direct high heat.

Variations

  • Spicy Squash Casserole: Incorporate diced jalapeños and a teaspoon of chili powder into the base mixture for a kick of heat. This variation pairs exceptionally well with the sharp cheddar and buttery crackers, adding a vibrant twist to the classic recipe.
  • Herbed Squash Casserole: Stir in two tablespoons of fresh chopped herbs such as thyme, chives, or parsley before cooking. The fresh herbs brighten the dish and provide a fragrant, aromatic profile that enhances the natural sweetness of the summer squash.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 days.
Freezer
Freezing is not recommended as the texture of the squash and the sauce will degrade significantly upon thawing.
Reheat
Reheat individual portions in the microwave or in a preheated oven at 350°F (175°C) until hot throughout.

Allow the leftover casserole to cool completely before transferring it to an airtight container. Keep it refrigerated to maintain its quality and food safety. The casserole can be stored for up to three days in the refrigerator.

When ready to eat, ensure it is heated through to a steaming temperature before serving, as this will help restore the original texture and flavor of the dish.

You can prepare the squash and onion mixture in the crockpot insert ahead of time and store it in the refrigerator for up to 24 hours before cooking. When ready to cook, simply place the insert into the base and start the cooking process as directed.

Avoid adding the cracker topping until immediately before serving to maintain its crispness, as the crackers will soften if stored with the warm casserole.

Serving ideas

Serve this squash casserole warm, directly from the crockpot or scooped into a serving dish. It makes an excellent side dish for roasted chicken, pork chops, or grilled sausages.

The creamy, savory profile of the casserole balances well with lighter main courses, making it a versatile addition to any meal, whether it is a casual weeknight dinner or a more formal family gathering.

Consider serving the casserole alongside a fresh garden salad or steamed green beans to add a crisp, refreshing element to the plate.

The contrast in textures between the soft, creamy squash and the crunchy salad or vegetables provides a balanced dining experience. Ensure that each serving receives a generous portion of the buttery cracker topping for the best overall presentation and taste.

Frequently asked questions

Can the squash be substituted with zucchini?
Yes, zucchini can be used as a direct substitute for yellow summer squash in this recipe. The preparation method remains the same, though zucchini may release slightly more moisture during cooking, so you may want to drain any excess liquid before adding the cracker topping.
Why is the casserole watery?
Squash has a high water content. To minimize excess liquid, ensure the squash is sliced uniformly and avoid packing the crockpot too tightly. If the casserole appears watery after cooking, you can stir it well to incorporate the liquid into the sauce, or let it stand for a few minutes before serving to allow the sauce to thicken slightly.
Can a different cheese be used?
While sharp cheddar is traditional and provides the best flavor, other cheeses like Monterey Jack, Gruyere, or a blend of cheeses can be used. Ensure the cheese is shredded fresh for the best melting performance, as pre-shredded varieties may not melt as smoothly into the sauce.

Ingredients

  • 4 lb yellow summer squash, sliced
  • 2 cups sweet Vidalia onions, diced
  • 1 cup sour cream
  • 2 cups sharp cheddar cheese, shredded
  • 1/2 cup butter, melted
  • 1 tbsp salt and pepper blend
  • 1 cup Ritz crackers, crushed

Instructions

  1. Place the sliced yellow summer squash and diced sweet Vidalia onions into the ceramic crockpot. Distribute the sour cream, sharp cheddar cheese, melted butter, and the salt and pepper seasoning over the vegetables. Use a large spoon to gently toss the ingredients together until the squash is evenly coated in the creamy mixture.
  2. Cover the crockpot with its lid. Set the heat to low and cook for three hours. The squash should become very tender and the cheese should be completely melted and integrated into a creamy sauce throughout the casserole. Resist the urge to lift the lid frequently, as this releases heat and moisture needed for the cooking process.
  3. Once the cooking time is complete, sprinkle the crushed buttery Ritz crackers evenly over the top of the squash mixture. Replace the lid for an additional five minutes if desired to allow the crackers to warm through, or serve immediately for a crispier texture. Scoop the casserole onto plates while warm.
