Tips for success

To make this dish even more flavorful, you can customize the chicken filling by adding spices like ground cumin, garlic powder, or onion powder.

If you prefer a bit of texture, stir in some black beans, sweet corn, or diced red onions along with the chicken. Warming the tortillas in the microwave for 15 seconds before rolling makes them much more pliable and prevents any tearing.

For an extra rich and creamy texture, you can use a blend of different cheeses like Monterey Jack, Cheddar, and Mozzarella. Always let the casserole rest for at least 5 minutes after baking; this crucial step allows the layers to settle and makes serving much cleaner. Serve with a variety of fresh toppings to add contrast to the rich dish.

Variations

  • Spicy Pepper Jack: Substitute the shredded cheese with Pepper Jack cheese and add a pinch of cayenne pepper to the chicken filling for an extra kick of heat.
  • Green Chile and Corn: Stir a small can of drained diced green chiles and a half cup of sweet corn into the chicken mixture before rolling for added texture.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 to 4 days.
Freezer
Freezing is not recommended as the sour cream can separate and become grainy upon thawing.
Reheat
Reheat covered with foil in a 350°F (175°C) oven for 15 to 20 minutes, or microwave individual portions for 1 to 2 minutes.

Store any leftover chicken enchiladas in an airtight container in the refrigerator for up to 3 to 4 days. Alternatively, you can cover the baking dish tightly with plastic wrap or aluminum foil before refrigerating.

To reheat, place individual portions in the microwave for 1 to 2 minutes, or cover the baking dish with foil and reheat in a 350°F (175°C) oven for 15 to 20 minutes until heated through.

This casserole is incredibly easy to assemble ahead of time. You can fully assemble the enchiladas, cover the dish tightly with foil, and store it in the refrigerator for up to 24 hours before baking. When ready to serve, bake as directed, adding an extra 5 to 10 minutes to the baking time to ensure it is heated through from its cold state.

Serving ideas

Serve these creamy enchiladas hot, straight from the baking dish, using a wide spatula to lift each portion cleanly. They make a complete and satisfying meal on their own, but they also pair beautifully with a variety of classic side dishes.

Consider serving them alongside a batch of Mexican rice, cilantro lime rice, or simple refried beans. A crisp green salad with a light vinaigrette provides a refreshing contrast.

For a festive presentation, set up a topping bar so everyone can customize their plate. Popular toppings include sliced jalapeños, diced avocado, a dollop of guacamole, or a spoonful of fresh salsa.

A squeeze of fresh lime juice over the top right before eating cuts through the richness of the sour cream beautifully. These enchiladas are perfect for casual family dinners or weekend gatherings.

Frequently asked questions

Can corn tortillas be used instead of flour tortillas?
Yes, corn tortillas work beautifully. Warm them in the microwave for 15 to 20 seconds first to make them pliable and prevent them from cracking when rolled.
Why does the sour cream sauce curdle?
Sour cream can curdle if it is exposed to direct high heat or boiled. In this recipe, baking at a moderate temperature helps keep the sauce smooth and velvety.
Can this recipe be frozen?
It is not recommended to freeze this dish because the sour cream can separate and develop a grainy texture once thawed and reheated.

Ingredients

  • 3 cups shredded cooked chicken
  • 2 cups sour cream
  • 8 flour tortillas
  • 2 cups shredded cheese, divided
  • 2 tbsp chopped fresh parsley

Instructions

  1. In a large mixing bowl, combine the shredded cooked chicken, 1 cup of the shredded cheese, and 1/2 cup of the sour cream. Stir the mixture well until the chicken is evenly coated and the cheese is distributed throughout.
  2. Lay a flour tortilla flat on your work surface. Spoon about 1/3 cup of the chicken filling down the center of the tortilla. Roll the tortilla tightly around the filling and place it seam-side down in the prepared baking dish. Repeat with the remaining tortillas.
  3. Spread the remaining sour cream evenly over the rolled tortillas in the baking dish, ensuring they are completely covered. Sprinkle the remaining 1 cup of shredded cheese evenly over the top of the sour cream layer.
  4. Place the baking dish in the preheated oven at 375°F (190°C) and bake for 20 to 25 minutes. The cheese should be completely melted and bubbling around the edges, with some golden-brown spots forming on the top surface.
  5. Remove the baking dish from the oven. Let the enchiladas rest for 5 minutes to allow the sauce to set slightly. Sprinkle the chopped fresh parsley over the top before serving warm with a spatula.
