Tips for success
For the best texture, use chicken thighs that are similar in size so they cook evenly. Pat them dry before seasoning to help the gravy cling better.
If you have time, let the seasoned chicken sit in the fridge for 30 minutes before baking to deepen the flavor. You can also add a pinch of smoked paprika or garlic powder to the salt and pepper for extra depth, though the video keeps it simple.
When pouring the gravy, aim to coat the chicken and potatoes evenly, but don't drown them. The gravy will reduce and thicken as it bakes, so a little goes a long way. If the gravy seems too thick after baking, stir in a splash of hot chicken broth. If it's too thin, return the dish to the oven for a few more minutes to let it reduce.
Variations
- Add vegetables: Toss 2 cups of sliced mushrooms or a handful of baby carrots into the dish with the potatoes. They'll cook in the gravy and add extra flavor and color.
- Cheesy topping: Sprinkle 1 cup of shredded cheddar or mozzarella over the top during the last 10 minutes of baking. Let it melt into a golden, bubbly crust.
- Herb infusion: Add 2 sprigs of fresh thyme or rosemary to the dish before baking. Remove them before serving, or chop the leaves and stir them into the gravy.
- Spicy kick: Add 1/2 teaspoon of red pepper flakes or a dash of hot sauce to the gravy before pouring. This adds a gentle heat that balances the creamy sauce.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth to loosen the gravy if needed.
- Freezer
- Freeze the fully baked and cooled dish in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat individual portions in the microwave for 2-3 minutes, or reheat the whole dish in a 350°F oven for 20-25 minutes, until hot and bubbly.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making the leftovers even more delicious. Reheat gently in the oven or microwave until hot, adding a splash of broth or water if the gravy has thickened too much. Let the dish cool for no more than 2 hours before refrigerating.
You can assemble the entire dish up to 24 hours in advance. Arrange the chicken, potatoes, and onions in the baking dish, pour over the gravy, cover, and refrigerate.
When ready to bake, add about 10 minutes to the cooking time since the dish starts cold. Alternatively, bake the dish fully, let it cool, and refrigerate; reheat in a 350°F oven until hot.
Serving ideas
Serve this smothered chicken and potato bake straight from the oven, spooning extra gravy over each portion. It pairs beautifully with a simple green salad dressed with lemon vinaigrette to cut through the richness.
Crusty bread is also a great addition for sopping up every last bit of the creamy sauce. For a heartier meal, serve alongside steamed green beans or roasted carrots.
This dish is satisfying on its own, but you can also serve it over rice, egg noodles, or mashed potatoes to stretch it further. The gravy is plentiful, so it works well as a sauce for any starch.
For a lighter option, serve with a side of sautéed spinach or a crisp cucumber salad. The leftovers are just as good, so consider making a double batch if feeding a crowd.

Smothered Chicken and Potato Bake: One-Pan Comfort

Ingredients
- 6 boneless skinless chicken thighs (about 2 lb total)
- 1 1/2 lb baby potatoes, quartered
- 2 cups creamy mushroom gravy (store-bought or homemade)
- 1 large yellow onion, halved and sliced into half-moons
- 1 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- Heat the oven to 375°F (190°C). Place the chicken thighs in a large rectangular baking dish, arranging them in a single layer. Scatter the quartered baby potatoes between and around the chicken pieces. Season everything evenly with kosher salt and black pepper.
- Pour the creamy mushroom gravy evenly over the chicken and potatoes, making sure every piece is lightly coated. Use a spoon to nudge the chicken and potatoes so the gravy settles into the gaps.
- Scatter the sliced onion half-moons over the top of the chicken and potatoes, distributing them evenly. The onions will soften and sweeten as they bake.
- Place the dish in the preheated oven and bake uncovered for 45 to 50 minutes, until the chicken is cooked through and the potatoes are tender when pierced with a fork. The gravy should be bubbling at the edges and slightly thickened.
- Remove the dish from the oven and let it rest for 5 minutes. The chicken should register 165°F (74°C) in the thickest part. The resting time lets the juices redistribute and the gravy settle.
- Use a large serving spoon to lift each chicken thigh with some potatoes and a generous scoop of the creamy mushroom gravy and soft onions. Serve hot, spooning extra gravy from the dish over each portion.
