Tips for success
If you find the biscuits are browning too quickly, loosely tent the baking dish with a piece of aluminum foil for the final 10 minutes of baking. This allows the potatoes and sausage to finish cooking without burning the crust.
You can also brush the tops of the biscuits with a little melted butter or an egg wash before baking to achieve an even deeper golden color and a richer, buttery flavor.
For a more rustic presentation, serve the dish directly from the baking pan. If you want to add a bit of fresh flavor, consider sprinkling some chopped fresh herbs like parsley or chives over the top just before serving.
This adds a bright, herbaceous note that cuts through the richness of the creamy gravy and complements the smoky notes of the sausage perfectly. It also makes the dish look more vibrant and appealing.
Variations
- Cheesy Sausage Bake: Sprinkle one cup of shredded cheddar or mozzarella cheese over the top of the biscuits during the last five minutes of baking for a melted, gooey finish.
- Herb-Infused Version: Stir one teaspoon of dried thyme or rosemary into the gravy before pouring it over the filling for an aromatic, herbal depth that pairs well with potatoes.
Storage and make-ahead
- Fridge
- Keep in an airtight container for up to 3 days.
- Freezer
- Freeze for up to 1 month in a sealed container.
- Reheat
- Reheat in a 350°F oven until hot or microwave in portions.
Store any leftovers in an airtight container to maintain freshness. Ensure the dish has cooled to room temperature, but do not leave it out for more than two hours to ensure food safety.
Properly stored, the bake will maintain its quality for several days in the refrigerator. When ready to eat again, ensure it is heated thoroughly, particularly the gravy and the meat, to restore its original texture and temperature.
You can assemble the base of the dish, including the sausage and potatoes in the gravy, ahead of time and store it in the refrigerator. However, add the biscuit topping only right before you are ready to bake. If you add the raw dough too early, it may become soggy due to the moisture in the gravy. Keep the assembled base covered tightly and bake it within 24 hours for the best results.
Serving ideas
Serve this dish warm, ideally directly from the oven. Because it is a hearty one-pan meal, it stands well on its own, but it can be paired with a crisp side salad dressed with a light vinaigrette to provide a refreshing contrast to the rich, creamy flavors of the bake. A side of steamed green beans or roasted asparagus also works beautifully if you want to include extra vegetables in your meal.
When serving, use a large spoon to ensure each portion includes a generous amount of the sausage, potato, and vegetable mixture along with a piece of the golden biscuit topping.
If you have extra gravy, you can always prepare a small side of additional gravy to drizzle over the top, though the dish itself should be plenty saucy. Encourage guests to enjoy the combination of textures in every single bite.

- 1 lb smoked sausage, sliced into coins
- 3 cups diced potatoes
- 1 cup frozen peas and carrots, thawed
- 2 cups creamy chicken gravy, store-bought or made ahead
- 1 can refrigerated biscuit dough, quartered
Instructions
- Preheat the oven to 375°F (190°C). In a large 9x13 inch baking dish, combine the sliced smoked sausage, diced potatoes, peas, and carrots. Spread the mixture evenly across the bottom of the dish to ensure uniform cooking.
- Pour the creamy chicken gravy over the sausage and vegetable mixture. Stir lightly to coat everything evenly. Take the refrigerated biscuit dough pieces, quarter them, and scatter the pieces across the top of the gravy mixture.
- Place the baking dish in the preheated oven. Bake for 30 to 35 minutes, or until the biscuit topping is deep golden brown and the gravy is bubbling around the edges. Ensure the internal temperature of the sausage reaches 160°F (71°C). Let rest for 5 minutes before serving.
