Before you start

Before beginning, ensure your slow cooker is clean and placed on a stable, heat-resistant surface. Have all ingredients measured out and ready to go.

If using refrigerated chicken, you can take it out of the fridge about 15 minutes before cooking so it is not ice-cold, but keep it at a cool temperature. Ensure your work area is clear and you have the necessary utensils, such as a large spoon for layering, ready for use.

Ingredients at a glance (6)
  • 4 whole boneless skinless chicken breasts
  • 2 cups baby spinach
  • 1 cup shredded mozzarella
  • 1 tbsp minced garlic
  • 1 tsp Italian seasoning
  • 1 cup thick white Alfredo ricotta sauce, store-bought or made ahead

Instructions

Layering the ingredients

  1. Prepare the slow cooker
Place the boneless skinless chicken breasts side by side into the base of the slow cooker insert. Ensure they are arranged in a single layer to promote even cooking during the braising process.
Look for The chicken should be arranged evenly across the bottom of the slow cooker.
Tip Avoid overcrowding the slow cooker to ensure the chicken cooks thoroughly and stays tender.
  2. Add the aromatics and sauce
Evenly distribute the baby spinach and shredded mozzarella over the chicken. Spoon the minced garlic, Italian seasoning, and the thick white Alfredo ricotta sauce over the top of the chicken and vegetables.
Look for All ingredients are layered on top of the chicken.
Tip Spread the sauce thoroughly to ensure every piece of chicken is well coated.

At the end of this phase, the chicken breasts should be neatly arranged in the bottom of the slow cooker, covered evenly with the spinach, cheese, herbs, and sauce. The ingredients should be layered to ensure even heat distribution. Check that all components are accounted for and that the sauce is spread across the top surface of the chicken before you secure the lid to begin the cooking process.

Slow cooking the chicken

  1. Slow cook the chicken
Cover the slow cooker with its lid. Cook on the low setting for approximately 4 hours, or until the chicken is fully cooked through and the sauce is bubbly and hot.
Look for The sauce is thick and creamy, and the spinach is wilted.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Check the internal temperature of the thickest part of the chicken breast.

During this phase, the chicken braises in the sauce, absorbing the flavors of the garlic and Italian seasoning. The spinach will wilt significantly, and the mozzarella will melt into the Alfredo ricotta sauce.

You will know this phase is complete when the chicken is tender and cooked through. The kitchen should smell savory and aromatic, indicating that the ingredients have successfully combined into a rich, creamy, and cohesive meal.

Serving the dish

  1. Serve the dish
Remove the chicken carefully from the slow cooker. Allow the meat to rest for at least 5 minutes before serving. Spoon the remaining creamy sauce and melted cheese mixture over the chicken breasts when plating.
Look for The chicken is tender and easy to pierce with a fork.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Use a wide spatula to transfer the chicken to prevent it from breaking apart.

Once the chicken is removed and allowed to rest, the sauce should be thick enough to coat the back of a spoon. Before serving, verify that the chicken is fully cooked and the sauce has reached a consistent temperature throughout. If the sauce appears too thin, you can stir it gently while the chicken rests to help it thicken slightly before plating the final meal for immediate service.

Common mistakes

A common mistake is cooking the chicken for too long, which can cause the meat to become stringy or dry, even in a sauce. Always set a timer and check the temperature once the recommended cooking time has elapsed.

Another error is over-stacking the chicken; ensure the breasts are in a single layer. Finally, ensure the lid remains closed during the cooking process; opening it frequently releases heat and extends the required cooking time significantly.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) at its thickest point. Use a meat thermometer to verify this. The exterior of the chicken should look soft and opaque, and it should be easily pulled apart with a fork.

The sauce should be thick, creamy, and bubbling around the edges, with the mozzarella fully melted and integrated into the mixture, creating a cohesive, velvety coating over the chicken.

  • Poultry: 165°F (74°C) in the thickest part
