Before you start

Before beginning, ensure the chicken breasts are patted dry. Have all ingredients measured and ready, specifically ensuring the cream cheese is cubed and at room temperature.

Check that the slow cooker is clean and the inner ceramic pot is properly seated. Clear enough counter space to accommodate the slow cooker and the bowls for serving. Have the forks ready for shredding the chicken once the cooking time is complete.

Ingredients at a glance (12)
  • 2 lb boneless chicken breasts
  • 2 cans (15 oz each) cannellini beans, drained
  • 8 oz diced fire-roasted Hatch green chiles
  • 1 cup sweet yellow corn
  • 1 tbsp ground cumin
  • 3 cups chicken stock
  • 8 oz cream cheese, softened and cubed
  • 1 cup sour cream
  • 1 cup blue corn tortilla strips, for serving
  • 1 whole avocado, sliced, for serving
  • 1/4 cup fresh cilantro, chopped, for serving
  • 1 whole lime, juiced for fresh lime juice, for serving

Instructions

Layering the ingredients

  1. Layer the ingredients
Place the raw chicken breasts into the bottom of the slow cooker. Add the drained cannellini beans, fire-roasted Hatch green chiles, sweet yellow corn, ground cumin, and chicken stock. Ensure all ingredients are evenly distributed to allow for consistent cooking.
Look for Ensure the chicken is mostly submerged in the stock.
Tip Layering the chicken at the bottom ensures it cooks thoroughly in the liquid.

The slow cooker should be filled with the chicken, beans, chiles, corn, and broth, with the cumin distributed throughout. The chicken should be mostly submerged.

There should be no signs of leaking or overflow, and the ceramic basin should be securely placed within the heating unit. Everything is ready for the long, slow simmer.

Slow cooking and shredding

  1. Slow cook and shred
Cover and cook on LOW for 6 hours. After 6 hours, verify the chicken is fully cooked through to at least 165°F (74°C). Remove the chicken breasts from the slow cooker and shred them using two forks, then return the shredded meat back to the pot.
Look for The chicken should pull apart easily with no resistance.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Using two forks provides the best texture for absorbing the creamy sauce.

After 6 hours, the kitchen should be filled with the savory aroma of cumin and roasted chiles. The chicken will look opaque and pull apart easily when tested with a fork. All liquid should be reduced and flavorful. The chicken is ready to be removed for shredding before the final enrichment phase begins.

Emulsifying and serving

  1. Emulsify the cream base
Add the softened, cubed cream cheese and sour cream into the slow cooker with the shredded chicken. Stir continuously until the dairy is fully incorporated and the chili reaches a thick, glossy, and ivory consistency throughout.
Look for The sauce should be uniform, smooth, and free of lumps.
Tip Softening the cream cheese beforehand makes it melt much faster into the hot chili.
  2. Serve the chili
Ladle the hot white chicken chili into individual serving bowls. Garnish each portion generously with blue corn tortilla strips, fresh sliced avocado, chopped cilantro, and a squeeze of fresh lime juice just before serving.
Look for The chili should be steaming hot when served.
Tip The acidity of the lime juice balances the richness of the cream cheese perfectly.

The chili should be thick, glossy, and ivory-colored after the dairy is stirred in. It should coat the back of a spoon without running off immediately. The final dish is ready to be garnished with fresh cilantro, avocado, and tortilla strips, presenting a vibrant contrast of textures and colors in every bowl served.

Common mistakes

Avoid adding the cold dairy ingredients too early in the cooking process, as this can cause the sauce to separate or curdle.

Do not attempt to shred the chicken while it is still in the pot with excessive liquid; removing it to a cutting board allows for a better shred and prevents splashing. Finally, ensure the beans are fully drained, as excess liquid from the cans can make the final chili watery.

How to tell it’s done

The chicken is fully cooked when it reaches an internal temperature of 165°F (74°C) and shreds easily with a fork.

The sauce is done when the cream cheese and sour cream have fully melted and integrated into a smooth, thick, and consistent ivory emulsion. The chili should be piping hot throughout, with no visible streaks of dairy remaining in the mixture.

  • Poultry: 165°F (74°C) in the thickest part
