Tips for success

For the best texture, use chicken breasts that are similar in size so they cook evenly.

If using very large breasts, consider cutting them in half horizontally. Let the cream cheese soften before adding it to the slow cooker for a smoother melt.

Toasting the hoagie rolls is essential—it adds a crisp contrast to the creamy filling and prevents sogginess. If you have extra time, you can also lightly butter the rolls before toasting for extra flavor.

Variations

  • Spicy Cheesesteak Chicken: Add a few slices of jalapeño or a teaspoon of red pepper flakes along with the vegetables for a spicy kick. Use pepper jack cheese instead of provolone for extra heat.
  • Mushroom-Swiss Chicken: Double the mushrooms and swap the provolone for Swiss cheese. Add a tablespoon of Dijon mustard to the sauce for a tangy twist.
  • Italian-Style Chicken: Season the chicken with Italian herbs like oregano and basil. Use mozzarella cheese and serve on garlic bread for an Italian-inspired sandwich.
  • Low-Carb Chicken Bowl: Skip the hoagie rolls and serve the chicken mixture over cauliflower rice or in a lettuce wrap. Top with extra cheese and a dollop of sour cream.

Storage and make-ahead

Fridge
Store leftover chicken mixture in an airtight container in the fridge for up to 3 days. Keep rolls separate to prevent sogginess.
Freezer
Freeze the chicken mixture (without rolls) in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.
Reheat
Reheat the chicken mixture in a skillet over medium heat or in the microwave until hot. Toast fresh rolls before serving.

Store any leftover chicken mixture in an airtight container in the refrigerator for up to 3 days. Keep the rolls separate to avoid sogginess. Reheat gently in the microwave or on the stovetop until hot.

The chicken mixture can be made a day ahead and refrigerated. Reheat in a skillet or microwave before serving.

You can also assemble the slow cooker with all ingredients the night before, store it in the refrigerator, and start cooking in the morning.

Serving ideas

Serve the creamy Philly cheesesteak chicken on toasted hoagie rolls with the melted provolone.

It’s a hearty meal on its own, but you can add a side of crispy fries, a simple green salad, or pickles for a complete dinner.

For a lower-carb option, serve the chicken mixture over rice, quinoa, or in lettuce wraps instead of bread.

The creamy sauce also works well over baked potatoes or pasta. Take your time with each step, and the result will be worth every minute spent in the kitchen.

Frequently asked questions

Can this recipe be made with chicken thighs instead of breasts?
Yes, boneless, skinless chicken thighs work well. They are more forgiving and stay moist even if cooked a bit longer. The cooking time may be similar, but check for doneness at 165°F (74°C).
Can this be cooked on high instead of low?
Yes, cook on high for about 2 1/2 to 3 hours. Keep an eye on the chicken to prevent overcooking. The sauce may reduce more on high, so you can add a splash of chicken broth if needed.
How can the sauce be thickened if it is too thin?
If the sauce is too thin after cooking, remove the chicken and vegetables, then simmer the sauce on the stovetop or set the slow cooker to high and leave the lid off for 10–15 minutes to reduce.
Can this recipe be made dairy-free?
Use a dairy-free cream cheese alternative and a dairy-free cheese like vegan provolone or mozzarella. Check that all other ingredients are dairy-free. The texture may vary slightly, but it will still be creamy.
What can be served with this besides hoagie rolls?
This chicken mixture is versatile. Serve it over rice, pasta, baked potatoes, or in lettuce wraps. It also makes a great filling for quesadillas or a topping for nachos.

A close-up of creamy Philly cheesesteak chicken in a toasted hoagie roll with melted provolone cheese.

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 8 oz mushrooms, sliced
  • 1/2 cup chicken broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 oz cream cheese, softened and cubed
  • 8 slices provolone cheese
  • 6 hoagie rolls, toasted

Instructions

  1. Place the sliced bell peppers, onion, and mushrooms in the bottom of the slow cooker. Lay the chicken breasts on top of the vegetables. In a small bowl, stir together the chicken broth, Worcestershire sauce, garlic powder, salt, and black pepper. Pour this mixture over the chicken and vegetables.
  2. Scatter the cubed cream cheese over the top of the chicken and vegetables. Do not stir; the cream cheese will melt and blend into the sauce as it cooks.
  3. Cover the slow cooker and cook on low for 4 to 5 hours, or until the chicken is cooked through and tender. The chicken is done when it reaches an internal temperature of 165°F (74°C) in the thickest part.
  4. Once the chicken is cooked, remove it to a cutting board. Use two forks to shred the chicken into bite-sized pieces. Return the shredded chicken to the slow cooker and stir gently to combine with the sauce and vegetables.
  5. Lay the provolone slices over the top of the chicken mixture. Cover the slow cooker and cook on low for 10 to 15 minutes, or until the cheese is fully melted and bubbly.
  6. While the cheese melts, toast the hoagie rolls in a toaster or under the broiler until golden and crisp on the edges.
  7. Using tongs, scoop the creamy chicken and vegetable mixture into the toasted hoagie rolls. Serve immediately.
