Before you start

Before beginning, ensure the slow cooker insert is clean and dry. Remove the chicken from the refrigerator about 20 minutes before starting to take the chill off, but do not leave it out for longer than 30 minutes for food safety.

Have all ingredients measured and ready, especially the cheese, which should be at room temperature to help it melt more evenly. Ensure the green onions are washed and sliced before you begin the assembly process.

Ingredients at a glance (6)
  • 4 boneless skinless chicken breasts
  • 1/2 cup chopped pecans
  • 1/4 cup green onions, sliced
  • 1 tsp paprika
  • 8 oz cream cheese
  • 1 cup shredded cheddar cheese

Instructions

Assembly Phase

  1. Prepare the Chicken
Place the boneless skinless chicken breasts into the bottom of the slow cooker, ensuring they are arranged in an even layer to promote consistent cooking throughout the process.
Look for Chicken should be flat against the bottom.
Tip Ensure the chicken is fully thawed before adding to the slow cooker for safe cooking.

The chicken should be arranged in a single layer at the bottom of the slow cooker. All ingredients should be layered on top, ready for the heat. Ensure the slow cooker is placed on a level, heat-resistant surface away from the edge of the counter. Check that the lid fits securely, as a tight seal is essential for maintaining the moisture and temperature required for slow cooking.

Cooking Phase

  1. Season and Add Cheese
Scatter the chopped pecans and sliced green onions over the chicken. Sprinkle the paprika evenly across the top. Finally, spoon the cream cheese and shredded cheddar cheese over the chicken and vegetables.
Look for Cheese should be distributed evenly on top.
Tip Use a spoon to dollop the cheese mixture for easier spreading.

During cooking, the aromas of melted cheese, paprika, and onions will fill the kitchen. The chicken will become tender as it braises in the cheese sauce. Avoid lifting the lid to check on the progress, as this releases steam and heat. By the end of this phase, the sauce should have thickened and the chicken should be fully cooked, tender, and ready for the final resting period.

Finishing Phase

  1. Slow Cook and Serve
Cover and cook on low for 4 to 6 hours or high for 2 to 3 hours until the chicken reaches an internal temperature of 165°F (74°C). Let the chicken rest for 5 minutes before serving.
Look for Chicken is opaque and cooked through.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Check the temperature at the thickest part of the breast.

The final phase involves letting the chicken rest for 5 minutes after cooking. This allows the juices to redistribute, ensuring each bite remains succulent.

The sauce should be creamy and rich, with the pecans and green onions visible on the surface. Check the internal temperature one last time to confirm it has reached 165°F (74°C) before transferring the chicken to a warm serving plate.

Common mistakes

A common mistake is overcrowding the slow cooker with too many ingredients, which can prevent the sauce from thickening properly. Another error is opening the lid too frequently; every time the lid is lifted, heat escapes, significantly increasing the cooking time.

Avoid using pre-shredded cheese if possible, as it is often coated in anti-caking agents that can hinder the smooth melting process and result in a slightly grainy sauce texture.

How to tell it’s done

The chicken is perfectly done when it is tender, opaque throughout, and reaches an internal temperature of 165°F (74°C) at its thickest point. Use a meat thermometer to verify this temperature.

The sauce should be smooth, thick, and bubbly, coating the chicken completely. If the sauce appears too thick, you can stir it gently once before serving to incorporate any juices released by the chicken during the final minutes of cooking.

  • Poultry: 165°F (74°C) in the thickest part
