Before you start

Before beginning, ensure all ingredients are properly prepared. Peel and dice the sweet potatoes into uniform pieces to ensure they cook at the same rate.

Soften the cream cheese at room temperature for about 30 minutes before starting, as this helps it integrate more smoothly with the other ingredients.

Check that your slow cooker is clean and positioned on a stable, heat-resistant surface with adequate space around it for proper ventilation during the cooking process.

Ingredients at a glance (5)
  • 2 lb chicken breasts, boneless and skinless
  • 2 cups sweet potatoes, peeled and diced
  • 1 packet poultry seasoning
  • 8 oz cream cheese, softened
  • 1 cup gouda cheese, shredded

Instructions

Layering the ingredients

  1. Prepare the slow cooker
Place the raw chicken breasts at the bottom of the slow cooker basin. Arrange the diced sweet potatoes evenly around the chicken to ensure uniform cooking.
Look for Chicken is arranged in a single layer at the base.
Tip Ensure the chicken is fully thawed before adding to the slow cooker for even heat distribution.

At this stage, the slow cooker is prepared with the raw chicken and sweet potatoes arranged in a single layer. The seasoning and cream cheese block are added on top, ready to begin the slow-cooking process. The ingredients should be neatly placed to ensure even heat distribution once the lid is closed.

Slow cooking the base

  1. Season and add cream base
Sprinkle the poultry seasoning packet over the chicken and sweet potatoes. Place the block of cream cheese directly in the center of the mixture.
Look for Cream cheese is centered on top of the seasoned ingredients.
Tip Using softened cream cheese helps it melt more quickly into the sauce during the cooking process.

After four to six hours of cooking, the kitchen will be filled with an aromatic scent. The chicken is tender and the sweet potatoes are soft to the touch. The cream cheese has melted into the cooking juices, creating a rich base that is ready for the final steps.

Finishing with cheese

  1. Cook and finish with cheese
Cover and cook on low for 4 to 6 hours. Once the chicken reaches an internal temperature of 165°F (74°C), shred the chicken with two forks. Stir in the shredded gouda cheese until fully melted and combined with the sauce.
Look for Sauce is smooth and chicken pulls apart easily.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Let the dish rest for 5 minutes before serving to allow the sauce to thicken slightly.

The final phase involves shredding the tender chicken and incorporating the shredded gouda. The sauce should be smooth, creamy, and clinging to the meat and potatoes. The dish is now ready for service, with all flavors perfectly balanced and the textures fully developed.

Common mistakes

Avoid lifting the slow cooker lid during the first few hours of cooking, as this releases heat and moisture, which can significantly extend the cooking time. Another common mistake is cutting the sweet potatoes too large, which can lead to uneven cooking.

Ensure all potatoes are diced to a similar size to achieve the desired tenderness. Finally, do not add the shredded gouda too early; it should only be stirred in at the very end to prevent the cheese from separating.

How to tell it’s done

The dish is ready when the chicken is fully cooked and pulls apart easily with a fork. Use a meat thermometer to confirm the chicken has reached an internal temperature of 165°F (74°C).

The sauce should be creamy and thick, coating the back of a spoon. If the sauce appears too thin after shredding the chicken, stir in the gouda and allow it to sit for a few minutes; the residual heat will help thicken the mixture.

  • Poultry: 165°F (74°C) in the thickest part
