Tips for success

To maximize the flavor of the corn, you can quickly sauté the kernels in a dry pan before adding them to the slow cooker, which enhances the charred effect.

If you enjoy extra heat, feel free to keep some of the jalapeño seeds or add a pinch of cayenne pepper to the spice mixture. The key to this dish is the balance between the creamy base and the bright, acidic finish of the fresh lime juice.

When serving, consider providing extra lime wedges on the side so guests can adjust the acidity to their personal preference. If you are serving this at a party, keep the slow cooker on the 'warm' setting to ensure the stew stays at the perfect temperature for everyone.

The combination of textures from the soft chicken and the crunchy corn is best enjoyed immediately after the garnishes are added.

Variations

  • Spicy Chipotle Version: Replace the chili powder with two tablespoons of finely chopped chipotle peppers in adobo sauce. This adds a deep, smoky heat that complements the sweetness of the roasted corn beautifully.
  • Vegetable-Packed Twist: Add a cup of diced bell peppers and black beans when layering the ingredients. This variation increases the fiber content and adds vibrant color and extra texture to the finished stew.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days. Ensure the stew cools for no more than 2 hours before refrigerating.
Freezer
Freeze in a freezer-safe container for up to 2 months. Thaw in the refrigerator overnight before reheating.
Reheat
Reheat gently on the stovetop over low heat, stirring occasionally, or use the microwave in short intervals until heated through.

Store any leftovers in an airtight container in the refrigerator for up to three days. Ensure the stew has cooled to room temperature for no more than two hours before placing it in the fridge. When reheating, it is best to do so gently on the stovetop over low heat, adding a splash of water or broth if the sauce has thickened too much in the cold.

You can prepare the ingredients in the slow cooker insert and keep it in the refrigerator overnight, then simply turn on the slow cooker in the morning.

Do not add the garnishes until you are ready to serve, as they will lose their freshness and texture if stored in the hot stew. This makes it an ideal 'dump-and-go' recipe for busy workdays where you want a hot meal waiting for you.

Serving ideas

Serve this stew in deep bowls to hold the creamy sauce and all the garnishes. Start by ladling a generous portion of the chicken and corn mixture into each bowl.

Top liberally with the crumbled cotija cheese, which adds a salty punch that cuts through the creaminess. Arrange the diced avocado and fresh cilantro on top for a burst of color and freshness that defines the elote experience.

Finish each bowl with a light dusting of Tajín and a squeeze of fresh lime juice. The lime is essential for brightening the overall profile of the dish. Serve alongside warm corn tortillas or tortilla chips if you want to scoop up the remaining sauce. This presentation ensures that every bite has a mix of textures and flavors, from the creamy chicken to the zesty, fresh toppings.

Frequently asked questions

Can this be made in a pressure cooker?
Yes, this recipe can be adapted for a pressure cooker. Add all ingredients except the cheese and garnishes, and cook on high pressure for 15 minutes. Allow for a natural release for 10 minutes before shredding the chicken and stirring in the cheese as instructed.
Why does the sauce look separated?
The sauce may separate if the cheese is added while the slow cooker is on a high heat setting or if it is cooked for too long after the cheese is added. Always stir in the cheese once the cooking cycle is complete and the heat is turned off to maintain a smooth, emulsified texture.
Can frozen corn be used instead of fire-roasted?
Frozen corn is a suitable substitute if fire-roasted corn is not available. To mimic the smoky flavor, you can dry-roast the frozen corn in a hot skillet for 5 minutes before adding it to the slow cooker. This will provide a similar depth of flavor to the dish.
