Tips for success
For the most flavorful sauce, take the time to bloom the spices in a dry skillet for a minute before adding them to the slow cooker.
This releases their essential oils and deepens their flavor. If you prefer a smoother sauce, you can puree the sauce with an immersion blender before adding the cream, but this is optional.
Leftovers taste even better the next day as the flavors continue to meld. Store in an airtight container in the refrigerator for up to 4 days.
To reheat, gently warm on the stovetop or in the microwave, adding a splash of water or cream if the sauce has thickened too much. This recipe also freezes well for up to 3 months.
Variations
- Spicy Version: Add 1-2 finely chopped green chilies or 1 teaspoon of cayenne pepper along with the spices for extra heat. For a smoky kick, use chipotle powder in place of paprika.
- Vegetable Tikka Masala: Replace the chicken with 2 cups of cauliflower florets and 1 cup of chickpeas. Cook on LOW for 3-4 hours, until the vegetables are tender. The rest of the recipe stays the same.
- Creamy Coconut Version: Swap the heavy cream for full-fat coconut milk and use coconut yogurt instead of Greek yogurt. This makes the dish dairy-free and adds a subtle tropical sweetness.
- Butter Chicken Style: Add 2 tablespoons of butter and 1 tablespoon of tomato paste along with the spices. The butter enriches the sauce and gives it a classic butter chicken flavor.

Store leftover chicken tikka masala in an airtight container in the refrigerator for up to 4 days. The sauce may thicken as it sits; add a splash of water or chicken broth when reheating to loosen it. Reheat gently on the stovetop over medium-low heat, stirring occasionally, until heated through.
You can assemble the entire dish in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook on LOW as directed, adding 30 minutes to the cooking time to account for the chilled ingredients. The cream and cilantro should be added at the end, just before serving.
Serving ideas
Serve the chicken tikka masala over steamed basmati rice for a classic pairing. To make saffron rice, soak a pinch of saffron threads in 2 tablespoons of hot water for 5 minutes, then stir into cooked basmati rice along with a little butter.
Warm naan bread in the oven or on a skillet and brush with melted butter for dipping.
For a complete meal, add a side of cucumber raita or a simple green salad with a lemon vinaigrette. The cool, creamy raita helps balance the warmth of the spices. You can also garnish each serving with extra chopped cilantro and a drizzle of cream for a beautiful presentation.

Slow-Cooker Chicken Tikka Masala: Creamy, Rich, Restaurant-Worthy

Ingredients
- 2 lb boneless, skinless chicken thighs
- 1 cup crushed tomatoes
- 1/2 cup plain Greek yogurt
- 2 tsp garam masala
- 2 tsp ground cumin
- 2 tsp paprika
- 1 tsp ground ginger
- 1 tsp garlic powder
- 1/2 cup heavy cream
- 1/4 cup chopped fresh cilantro
- 1 tsp kosher salt
Instructions
- Place the chicken thighs in the bottom of a 5-6 quart slow cooker. In a small bowl, whisk together the crushed tomatoes, Greek yogurt, garam masala, ground cumin, paprika, ground ginger, garlic powder, and salt. Pour the mixture over the chicken, turning the pieces to coat them evenly.
- Secure the lid on the slow cooker. Cook on LOW for 5 hours, until the chicken is tender and easily shreds with a fork. Avoid opening the lid during cooking to keep the heat steady.
- Using two forks, shred the chicken thighs directly in the slow cooker. The meat should pull apart easily and be fully cooked through, with an internal temperature of 165°F (74°C).
- Pour the heavy cream into the slow cooker and stir gently to combine. Add the chopped cilantro and stir again. Let the sauce warm through for about 10 minutes on LOW.
- Ladle the creamy chicken tikka masala over steamed saffron basmati rice. Serve with warm buttered naan bread for dipping.
