Before you start

Before starting, ensure your slow cooker is clean and positioned on a stable, heat-resistant surface. Prepare your ingredients by slicing the mushrooms evenly to ensure they cook at the same rate.

If your creamy Marsala sauce is homemade, ensure it has cooled completely if you have prepared it in advance. Verify that your slow cooker lid fits securely to trap the moisture and heat necessary for the best results throughout the four-hour cooking time.

Ingredients at a glance (4)
  • 1 lb precooked chicken meatballs
  • 8 oz brown mushrooms, sliced
  • 1 tbsp Italian seasoning
  • 1 1/2 cups creamy marsala sauce (contains sulphites)

Instructions

Layering the ingredients

  1. Assemble ingredients
Place the precooked chicken meatballs into the bottom of the slow cooker insert. Add the sliced mushrooms on top of the meatballs, ensuring they are evenly distributed.
Look for ensure the meatballs form an even base layer
Tip Layering the meatballs first keeps them moist during the cooking process.

At the end of this phase, the slow cooker should be filled with an even layer of meatballs topped with sliced mushrooms. Ensure the ingredients are arranged so that the sauce, when added, can distribute evenly. Everything should look organized and ready to receive the seasoning and liquid components of the recipe.

Adding seasonings and sauce

  1. Season and sauce
Sprinkle the Italian seasoning over the mushrooms and meatballs. Pour the creamy Marsala sauce over the entire mixture, making sure everything is well coated.
Look for the sauce should cover the meatballs and mushrooms
Tip Use a spatula to gently push down any mushrooms that are not submerged in the sauce.

After this step, the Italian seasoning should be visible on the surface of the mushrooms and meatballs. The creamy Marsala sauce should completely coat the ingredients, creating a uniform look. The mixture should smell aromatic from the herbs, and the sauce should appear thick and well-distributed throughout the slow cooker.

Slow cooking cycle

  1. Slow cook
Cover the slow cooker and cook on low for 4 hours. Ensure the internal temperature of the chicken meatballs reaches at least 165°F (74°C) before serving to ensure they are heated through safely.
Look for the sauce should be bubbling and thick
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Check the temperature in the center of the largest meatball.

Once the cooking cycle concludes, the sauce will have thickened significantly, and the mushrooms will have softened into the creamy mixture.

The meatballs should be hot and tender, with the entire dish emitting a rich, savory scent. Verify the internal temperature of the meatballs before proceeding to serve the dish to your guests.

Common mistakes

Avoid lifting the lid too frequently during the cooking process, as this releases essential heat and steam, which can significantly increase the required cooking time.

Ensure you do not add too much liquid, as the mushrooms will release their own water, potentially diluting the sauce. Finally, check that the meatballs are fully defrosted if they were previously frozen, as adding frozen meatballs can alter the cooking time and texture.

How to tell it’s done

The dish is considered done when the creamy sauce has thickened and the chicken meatballs are heated thoroughly to an internal temperature of at least 165°F (74°C).

The mushrooms should be tender and have absorbed the savory flavors of the Marsala sauce. Ensure the sauce is consistently warm throughout the slow cooker insert before you begin plating the meal for serving.

  • Poultry: 165°F (74°C) in the thickest part
