Tips for success
For the best texture, use gold potatoes and cut them into uniform 1-inch cubes. This ensures they cook evenly and become creamy without falling apart.
If you prefer a thicker sauce, cook the dish for an extra 30 minutes with the lid slightly ajar to let some moisture evaporate. For a touch of freshness, you can sprinkle chopped parsley over the top before serving, though the video doesn't show it.
This recipe is forgiving—you can swap the garlic powder for fresh minced garlic if you like, but add it with the sauce so it doesn't burn.
If your Alfredo sauce is very thick, you can thin it with a splash of milk before adding it to the slow cooker. And if you're cooking for a crowd, this recipe doubles easily as long as your slow cooker is large enough.
Variations
- Add Vegetables: Stir in a cup of frozen peas or a handful of fresh spinach during the last 30 minutes of cooking for a pop of color and extra nutrition.
- Spicy Kick: Use a spicy smoked sausage or add a pinch of red pepper flakes along with the garlic powder for a subtle heat that builds as it cooks.
- Cheese Lovers: Sprinkle an extra 1/2 cup of shredded mozzarella or provolone over the top during the last 15 minutes of cooking, then let it melt into the sauce.
- Chicken Version: Swap the smoked sausage for 1 1/2 pounds of boneless, skinless chicken thighs cut into chunks. Cook until the chicken reaches 165°F (74°C) and is tender.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbly.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce may thicken as it cools; add a splash of milk or chicken broth when reheating to restore a creamy consistency. Cool the dish within 2 hours of cooking before refrigerating.
You can prepare the sausage and potatoes up to a day in advance and store them in the refrigerator in separate containers. When ready to cook, layer them in the slow cooker and proceed with the recipe.
You can also assemble the entire dish (without cooking) in the slow cooker insert and refrigerate it overnight; add a little extra cook time since the ingredients will start cold.
Serving ideas
Serve this creamy sausage and potato dish as a main course with a side of crusty bread or a simple green salad.
The bread is perfect for soaking up the extra Alfredo sauce, and a crisp salad adds a fresh contrast to the richness. It also pairs well with steamed green beans or roasted broccoli for a complete meal.
For a heartier meal, you can serve it over cooked egg noodles or rice, though it's plenty satisfying on its own. The dish is best enjoyed hot, straight from the slow cooker. Leftovers reheat well, making it a great option for lunch the next day.

Slow Cooker Creamy Sausage and Potato Alfredo

Ingredients
- 1 1/2 lb smoked sausage, sliced into thick coins
- 2 lb gold potatoes, cut into 1-inch cubes
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 2 cups Alfredo sauce
Instructions
- Place the sliced smoked sausage in an even layer in the bottom of a 6-quart slow cooker. Spread the coins out so they cover the bottom as much as possible, overlapping slightly if needed.
- Scatter the cubed gold potatoes over the sausage in an even layer. No need to stir; the layers will meld as they cook.
- Sprinkle the grated Parmesan cheese and garlic powder evenly over the potatoes. Use your fingers or a spoon to distribute the seasonings as evenly as possible.
- Pour the Alfredo sauce over the entire mixture. Use a spatula to gently press down on the potatoes so they are mostly submerged in the sauce.
- Place the lid on the slow cooker and set it to low. Cook for 4 to 5 hours, until the potatoes are tender when pierced with a fork. Do not open the lid during the first 3 hours to keep the heat steady.
- After 4 hours, check the potatoes by piercing a cube with a fork. They should offer little resistance and be easily pierced. If not, continue cooking for another 30 minutes and check again.
- Once the potatoes are tender, give the mixture a gentle stir to combine the layers. Be careful not to break up the sausage coins or mash the potatoes.
- Spoon the creamy sausage and potato mixture onto plates or into bowls. Serve hot, with extra grated Parmesan on top if desired.
