Tips for success
To achieve the ultimate restaurant-style texture, always reserve a cup of pasta cooking water before draining your linguine.
This starchy liquid is pure gold; if your cream sauce reduces too much or becomes too thick after tossing with the pasta, a small splash of this water will instantly emulsify the sauce, making it incredibly smooth and glossy.
For the best flavor, buy wild-caught shrimp and peel them yourself. The shells can even be frozen and used later to make a rich seafood stock.
When searing the shrimp, make sure they are completely dry; any moisture on the surface of the shrimp will create steam in the hot pan, preventing that beautiful golden crust from forming.
Variations
- Spicy Cajun Shrimp Pasta: Swap the seafood seasoning for a bold Cajun spice blend and add a pinch of red pepper flakes to the garlic butter for a fiery kick.
- Creamy Spinach and Tomato Scampi: Toss in fresh baby spinach and halved cherry tomatoes during the last minute of simmering the cream sauce for added color and flavor.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 2 days.
- Freezer
- Freezing is not recommended as the cream sauce may separate and the shrimp can become rubbery upon thawing.
- Reheat
- Reheat gently in a skillet over low heat, adding a splash of milk or cream and stirring constantly until hot throughout.
Store any leftover pasta in an airtight container in the refrigerator for up to two days. Because seafood spoils quickly, it is important to cool the pasta to room temperature within two hours of cooking before transferring it to the fridge. Keep in mind that the pasta will continue to absorb the cream sauce as it sits.
While this dish is best enjoyed fresh, you can prep components ahead of time to save minutes during dinner prep.
Peel and devein the shrimp, mince the garlic, and chop the parsley up to a day in advance, storing them in separate airtight containers in the refrigerator. Cooking the pasta or sauce ahead of time is not recommended.
Serving ideas
Serve this luxurious creamy shrimp scampi linguine immediately while it is steaming hot. Present it in warm shallow bowls to keep the cream sauce from cooling down too quickly.
A final dusting of freshly cracked black pepper or a squeeze of fresh lemon juice over the top just before serving adds a bright, professional finish.
Accompany this rich pasta dish with a simple, crisp green salad tossed in a light vinaigrette to balance the decadence of the cream sauce. Warm, crusty garlic bread or a sliced baguette is also a wonderful addition, perfect for wiping up any extra velvety garlic-butter sauce left on the plate.

Creamy Shrimp Scampi Linguine

Ingredients
- 12 oz linguine pasta
- 1 lb jumbo shrimp, peeled and deveined
- 1 tsp seafood seasoning
- 4 tbsp unsalted butter, divided
- 4 cloves garlic, minced
- 1 cup heavy cream
- 2 tbsp fresh parsley, chopped
Instructions
- Bring a large pot of salted water to a rolling boil over high heat. Add the linguine pasta and cook according to the package directions until it is just al dente, which usually takes about nine to eleven minutes. Drain the pasta thoroughly in a colander, reserving a half cup of the starchy pasta water just in case, and set the noodles aside.
- Pat the jumbo shrimp dry and toss them with the seafood seasoning. Melt two tablespoons of the unsalted butter in a large skillet over medium-high heat. Add the seasoned shrimp in a single layer and sear for about two minutes per side. Cook until they turn pink and opaque, reaching a safe internal temperature of 145°F (63°C). Transfer the cooked shrimp to a plate and set aside.
- Reduce the heat to medium and melt the remaining two tablespoons of unsalted butter in the same skillet. Add the minced garlic and sauté for about one minute until fragrant, being careful not to let it burn. Pour in the heavy cream, stirring constantly to scrape up any browned bits from the bottom of the pan. Bring the mixture to a gentle simmer and let it cook for three minutes until slightly thickened.
- Add the drained linguine pasta directly into the skillet with the simmering creamy white sauce. Toss the noodles gently with tongs for one minute until they are completely coated and have absorbed some of the sauce. Turn off the heat, arrange the seared jumbo shrimp on top of the pasta, and sprinkle with the fresh chopped parsley before serving immediately.
