Before you start

Preheat the oven to 375°F (190°C) and ensure the oven rack is centered. Peel, devein, and pat the shrimp completely dry with paper towels, keeping them refrigerated until ready to mix.

Drain any excess liquid from the crawfish tails. Bring a large pot of water to a rolling boil and have your 9x13-inch baking dish ready on the counter.

Ingredients at a glance (4)
  • 1 lb pasta
  • 1 lb shrimp, peeled and deveined
  • 1/2 lb crawfish tails
  • 4 cups cheese, shredded and divided

Instructions

Pasta Boiling and Draining

  1. Boil the pasta
Bring a large stockpot of salted water to a rolling boil over high heat. Add the pasta and cook until just al dente according to package instructions. Pour the contents into a colander to drain thoroughly, shaking off all excess water.
Look for pasta is tender with a slight bite
Tip Avoid boiling beyond al dente so the pasta holds its shape while baking.

The pasta should be cooked until tender yet firm to the bite. Steam should rise cleanly from the colander, and the noodles should be shaken thoroughly so that no pooling water remains. The pasta must be warm enough to begin melting the cheese immediately when transferred to the mixing bowl.

Assembly and Folding

  1. Combine pasta with seafood and cheese
Transfer the warm drained pasta to a large mixing bowl. Add the shrimp, crawfish, and three cups of the cheese. Stir thoroughly until the melting cheese thoroughly coats every noodle and the seafood is evenly distributed throughout the mixture.
Look for mixture is evenly combined and cohesive
Tip Mix gently so the delicate crawfish tails stay intact.

The seafood should be distributed uniformly with the warm pasta and the first portion of shredded cheese. As the ingredients are stirred, the cheese should melt into strings, binding the shrimp, crawfish, and noodles into a thick, glossy, cohesive mass ready to be transferred to the baking dish.

Baking and Resting

  1. Bake the casserole
Preheat the oven to 375°F (190°C). Spread the combined mixture into a 9x13-inch baking dish and top evenly with the remaining cup of cheese. Bake for 25 to 30 minutes until the top is bubbling and golden, and the seafood reaches a minimum safe internal temperature of 145°F (63°C). Rest for 5 minutes before scooping.
Look for cheese is deeply golden and bubbly
Safe temperature 145°F (63°C) internal temperature (shellfish)
Tip Insert a digital probe into the center of a shrimp to confirm doneness.

The surface should feature a vibrant golden-brown crust with bubbling cheese breaking through across the top. The casserole should smell rich and savory.

After baking, a five-minute resting period allows the melted cheeses to settle slightly, ensuring neat scoops that maintain generous cheese pulls.

Common mistakes

Avoid overboiling the pasta in the initial step; cooking beyond al dente leads to a mushy casserole after baking.

Another frequent mistake is leaving moisture on the seafood, which releases water into the bake and dilutes the cheesy richness. Be sure to pat all seafood dry before folding it into the warm pasta.

How to tell it’s done

The casserole is fully done when the top layer of cheese is deeply golden brown and bubbling steadily around the entire perimeter of the dish.

A food thermometer inserted into the thickest piece of shrimp in the center must register at least 145°F (63°C), indicating the shellfish is fully cooked and safe to eat.

  • Shellfish: 145°F (63°C) in the thickest part
