Before you start

Before beginning, organize all ingredients and equipment to ensure a smooth cooking process. Cook the lasagna noodles according to the package directions, drain them, and lay them flat on parchment paper to prevent sticking.

Peel and devein the shrimp, patting them completely dry with paper towels. Shred the mozzarella cheese and have your prepared béchamel sauce ready. Having everything prepped and ready allows you to assemble the layers quickly and efficiently.

Ingredients at a glance (7)
  • 2 tbsp butter
  • 1 lb raw shrimp, peeled and deveined
  • 3 cups béchamel sauce, store-bought or made ahead
  • 12 lasagna noodles, cooked
  • 1 lb shredded lump crabmeat
  • 3 cups shredded mozzarella cheese
  • 2 tbsp chopped fresh parsley, for garnish

Instructions

Sautéing the Shrimp and Warming the Sauce

  1. Sauté the Shrimp
Melt the butter in a large skillet over medium heat. Add the raw shrimp and sauté for 3 to 4 minutes until they turn pink and opaque. Remove the shrimp from the heat and set them aside, reserving a few whole shrimp for the final garnish.
Look for The shrimp should be fully pink and opaque.
Tip Do not overcook the shrimp as they will continue to bake further in the oven.
  2. Warm the Béchamel
Gently warm the prepared béchamel sauce in a saucepan over low heat, stirring occasionally to ensure it is smooth and pourable. If the sauce is too thick, whisk in a splash of milk or water to reach the desired consistency.
Look for The sauce should be warm, smooth, and easily pourable.
Tip Keep the heat low to prevent the cream-based sauce from scorching on the bottom.

At the end of this first phase, the kitchen will fill with the rich aroma of sweet butter and savory seafood. The shrimp should be opaque and pink, cooked just enough to seal in their juices without becoming rubbery. The prepared béchamel sauce must be warm, smooth, glossy, and easily pourable. Ensure there are no lumps in the sauce before moving on to the assembly stage.

Assembling the Lasagna Layers

  1. Assemble the Lasagna Layers
Spread a thin layer of the warmed béchamel sauce at the bottom of a 9x13-inch baking dish. Place 4 cooked lasagna noodles on top. Layer with one-third of the shredded lump crabmeat, sautéed shrimp, and shredded mozzarella cheese. Repeat the layers twice more, ending with a generous layer of mozzarella.
Look for The top layer should be completely covered in mozzarella cheese.
Tip Distribute the seafood evenly so every slice gets a perfect mix of shrimp and crab.

By the end of this phase, the baking dish is fully assembled with alternating layers of tender pasta sheets, rich béchamel, sweet shredded crab, and sautéed shrimp.

The layers should look even and compact, with the final blanket of shredded mozzarella completely covering the top noodle layer. There should be no dry pasta edges visible, ensuring every single bite cooks evenly and stays moist in the oven.

Baking, Broiling, and Garnishing

  1. Bake the Lasagna
Preheat the oven to 375°F (190°C). Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, ensuring the seafood inside reaches a safe internal temperature of 145°F (63°C) and the edges are bubbling.
Look for The edges should be bubbling and the cheese melted.
Safe temperature 145°F (63°C) internal temperature (shellfish)
Tip Baking covered first keeps the pasta moist before browning the cheese.
  2. Broil and Garnish
Turn the oven to broil and cook for 2 to 3 minutes until the top mozzarella is golden brown and bubbly. Remove from the oven and let rest for 15 minutes to set. Garnish with chopped fresh parsley and the reserved whole shrimp before slicing.
Look for The cheese should have beautiful golden-brown spots.
Tip Letting the lasagna rest prevents it from falling apart when sliced.

The lasagna is finished when the mozzarella cheese on top is completely melted, bubbly, and speckled with deep golden-brown spots from the broiler. You will hear a gentle, satisfying sizzling around the edges of the baking dish, and the creamy sauce will be bubbling hot. Let the lasagna rest for the full recommended time before slicing to ensure the layers hold their shape beautifully when served.

Common mistakes

One common mistake is using wet ingredients, which leads to a runny, watery lasagna that collapses when sliced. Ensure the cooked noodles are patted dry and the crabmeat is thoroughly drained.

Another error is overcooking the shrimp during the initial sauté; remember they will continue to cook inside the lasagna while it bakes. Finally, do not skip the resting period after baking, as cutting into a piping hot lasagna immediately will cause the layers to slide apart.

How to tell it’s done

To ensure the seafood lasagna is cooked perfectly and safe to consume, check that the internal temperature of the seafood reaches 145°F (63°C) when measured with a digital food thermometer inserted into the center.

The top should be a deep golden brown, and the edges should be bubbling vigorously. The pasta should feel tender when pierced with a knife, indicating that the noodles have fully absorbed the rich flavors of the béchamel sauce.

  • Shellfish: 145°F (63°C) in the thickest part
