Before you start

Before beginning, gather and measure all ingredients to ensure a smooth assembly process. Pat the shrimp dry with paper towels so they sear cleanly. Drain the crab meat carefully, checking for any stray pieces of shell.

Chop the fresh parsley for garnish. Shred the creamy cheese if it is not pre-shredded. If using traditional lasagna sheets, boil them according to package instructions until al dente, drain, and lay them flat to prevent sticking.

Ingredients at a glance (6)
  • 9 lasagna sheets, cooked
  • 3 cups rich white sauce
  • 12 oz crab meat, drained
  • 1 lb shrimp, peeled and deveined
  • 3 cups creamy cheese, shredded
  • fresh parsley, chopped, for serving

Instructions

Sauce and Seafood Preparation

  1. Prepare the Seafood Sauce
In a mixing bowl, combine the rich white sauce and the drained crab meat. Stir gently until the crab meat is evenly distributed throughout the white sauce, ensuring a rich and flavorful base for the lasagna layers.
Look for The crab meat should be thoroughly incorporated into the sauce.
Tip Fold the crab meat gently to keep some nice chunks intact.
  2. Sear the Shrimp
Heat a skillet over medium-high heat. Add the shrimp in a single layer and sear for 2 to 3 minutes per side until they turn pink and opaque. Ensure they reach a safe internal temperature of 145°F (63°C). Remove from heat and set aside.
Look for The shrimp should be firm, pink, and opaque.
Safe temperature 145°F (63°C) internal temperature (shellfish)
Tip Do not overcrowd the skillet to ensure a beautiful golden sear.

At the end of this phase, the kitchen will be filled with the rich aroma of sweet seafood. The white sauce should be thick, smooth, and glossy, with flecks of sweet crab meat distributed evenly throughout.

The seared shrimp should be pink, slightly caramelized on the edges, and firm to the touch, ready to be layered into the lasagna.

Assembly and Layering

  1. Assemble the Lasagna
Spread a thin layer of the crab-infused white sauce in the bottom of a 9x13-inch baking dish. Lay three lasagna sheets on top. Scatter half of the seared shrimp over the pasta, pour a third of the crab sauce, and sprinkle with one cup of creamy cheese. Repeat the layers, ending with pasta, the remaining crab sauce, and a generous topping of the remaining creamy cheese.
Look for All pasta sheets should be completely covered by sauce and cheese.
Tip Press down gently on each pasta layer to remove trapped air pockets.

At this stage, the lasagna is fully assembled in the baking dish. The top layer should be completely covered with a generous blanket of creamy cheese, hiding the pasta sheets below. The dish should feel heavy and solid, with the colorful white sauce and seafood layers visible through the sides of the baking pan.

Baking and Resting

  1. Bake the Lasagna
Preheat the oven to 375°F (190°C). Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 to 20 minutes until the edges are bubbling hot and the cheese on top forms a golden, bubbly crust.
Look for The edges should bubble vigorously and the top should be golden brown.
Tip Tent the foil slightly so it does not touch and stick to the melting cheese.
  2. Garnish and Rest
Remove the lasagna from the oven and let it rest on a counter for 15 minutes to set. Garnish the top with chopped fresh parsley before slicing and serving.
Look for The lasagna should hold its shape when sliced.
Tip Use a sharp knife and wipe it clean between cuts for perfect slices.

The lasagna emerges from the oven with a spectacular golden-brown crust, bubbling intensely around the edges. The cheese on top is perfectly melted and caramelized. After resting on the counter, the bubbling subsides, and the structure firms up, allowing a knife to slice through the layers cleanly without any filling escaping.

Common mistakes

One common mistake is assembling the lasagna while the white sauce or seared shrimp are still piping hot, which can melt the cheese prematurely and cause the layers to slide.

Another error is failing to drain the crab meat thoroughly; excess moisture will dilute the white sauce and make the lasagna watery. Lastly, cutting into the lasagna immediately after removing it from the oven will cause it to fall apart.

How to tell it’s done

To determine if the seafood lasagna is fully cooked, look for a deeply golden-brown top crust with vigorously bubbling edges.

The shrimp inside must be opaque and firm, having reached a safe internal temperature of 145°F (63°C). Let the lasagna rest for at least 15 minutes before slicing to allow the layers to set and hold their shape beautifully.

  • Shellfish: 145°F (63°C) in the thickest part
