Before you start

Before starting, ensure all your seafood is properly prepped. If using frozen shrimp, thaw them completely in the refrigerator and pat them dry with paper towels to prevent excess moisture in your lasagna.

Grate your mozzarella and parmesan cheeses freshly rather than using pre-shredded varieties, as fresh cheese melts much more smoothly and provides a better flavor profile for this dish.

Ingredients at a glance (6)
  • 1 box lasagna noodles, cooked according to package directions
  • 1 lb shrimp, peeled and deveined
  • 1 lb lump crab meat, picked over for shells
  • 2 cups creamy white sauce, store-bought or made ahead
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese

Instructions

Preparing the pasta

  1. Prepare the pasta
Boil the lasagna noodles in a large pot of salted water according to the package directions until al dente. Drain the noodles thoroughly in a colander and set them aside to cool slightly before assembly.
Look for The noodles should be tender but still hold their shape.
Tip Avoid overcooking the noodles as they will continue to soften in the oven.

The noodles must be cooked until they are tender enough to layer but still firm. Drain them well so no excess water remains, as this would dilute the creamy sauce.

Once drained, lay them out on a clean surface to prevent them from sticking together before you begin the assembly process.

Layering the seafood

  1. Assemble the lasagna
Spread a thin layer of the creamy white sauce in the bottom of a 9x13 inch baking dish. Add a layer of cooked noodles, followed by a portion of the shrimp and crab meat. Sprinkle with a generous amount of mozzarella and parmesan cheese. Repeat these layers until all ingredients are used, finishing with a final layer of cheese.
Look for Ensure the seafood is evenly distributed across each layer.
Tip Do not overfill the dish to prevent bubbling over in the oven.

Check that your layers are even. You should have a consistent distribution of shrimp and crab throughout the dish. Ensure the noodles slightly overlap to create a solid base, and verify that you have reserved enough cheese for a generous, golden crust on the final top layer.

Baking and resting

  1. Bake to perfection
Preheat your oven to 375°F (190°C). Cover the baking dish with foil and bake for 30 minutes. Remove the foil and continue baking for another 15 minutes, or until the top is golden brown and the seafood is cooked through to 145°F (63°C). Let the lasagna rest for 15 minutes before slicing and serving.
Look for The top should be golden brown and bubbly.
Safe temperature 145°F (63°C) internal temperature (shellfish)
Tip Resting the lasagna allows the layers to set properly for clean slices.

The lasagna should be bubbling vigorously when you remove it from the oven. The top should have developed a nice golden-brown color. Once removed, let it sit on a cooling rack for at least 15 minutes before attempting to slice, which ensures the sauce sets into the layers.

Common mistakes

A common mistake is using too much liquid, which can lead to a watery lasagna. Ensure your sauce is thick enough before assembling.

Another error is failing to rest the dish; cutting into it immediately out of the oven will cause the layers to slide apart. Patience is key to achieving that perfect, structured slice that holds its shape on the plate.

How to tell it’s done

The lasagna is done when the top is golden brown, the sauce is bubbling around the edges, and the internal temperature of the seafood has reached 145°F (63°C).

The pasta should be tender but not mushy. Always use a food thermometer to check the center of the dish to ensure it has reached the required temperature for safety.

  • Shellfish: 145°F (63°C) in the thickest part
