Tips for success

For the best texture, shred the chicken directly in the slow cooker so it absorbs the sauce. If you prefer chunkier pieces, use a fork to break it into larger chunks instead of fine shreds. The sauce will thicken as it sits; if it becomes too thick, stir in a splash of chicken broth or water to loosen it.

To make this a complete meal, serve over steamed rice, quinoa, or cauliflower rice. The creamy sauce is also delicious spooned over crispy tostadas or used as a filling for tacos.

You can also add a squeeze of fresh lime juice and a sprinkle of cilantro just before serving for a burst of freshness—though the video doesn't show it, it's a natural addition.

Variations

  • Spicy Green Chile Chicken: Add 1–2 diced jalapeños or a teaspoon of chipotle powder to the salsa mixture before cooking. The heat will infuse the sauce, giving it a smoky kick that pairs well with the creamy cheese.
  • Cilantro-Lime Finish: After shredding, stir in a handful of chopped fresh cilantro and the juice of one lime. The bright, fresh flavors cut through the richness and add a vibrant finish.
  • Creamy Poblano Chicken: Replace the Hatch chiles with 2 roasted and diced poblano peppers. The poblanos add a smoky, mild heat that complements the salsa verde beautifully.
  • Cheesy Chicken Nachos: Use the shredded chicken as a topping for tortilla chips. Sprinkle with extra Monterey Jack and broil until bubbly, then serve with pico de gallo and guacamole.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will meld and deepen overnight.

Reheat gently in the microwave or on the stovetop, adding a little water or broth if the sauce has thickened too much. The chicken can also be used in tacos, burritos, or over nachos for a quick meal.

This dish is perfect for meal prep. Cook the chicken as directed, then let it cool completely before storing in individual portions. It keeps well in the refrigerator for up to 4 days.

You can also freeze the cooked chicken and sauce in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator and reheat gently.

Serving ideas

Serve the creamy salsa verde chicken with warm flour tortillas, a side of rice, or a simple green salad. The dish is rich and satisfying on its own, but the tortillas are perfect for scooping up the sauce. For a low-carb option, serve over cauliflower rice or with crisp lettuce cups.

To make it a feast, add toppings like diced avocado, chopped cilantro, or a drizzle of crema—though not in the original video, they complement the flavors beautifully.

The dish is also great for feeding a crowd; simply double the recipe and use a larger slow cooker. Leftovers are delicious in quesadillas or as a topping for baked potatoes.

Frequently asked questions

Can this recipe be made with chicken breasts?
Yes, but chicken breasts tend to dry out more easily in the slow cooker. Cook on low for 3–4 hours, and check the temperature early. You may want to add a little chicken broth to keep them moist. Shred carefully, as breasts can become stringy if overcooked.
Why does the sauce look curdled?
Curdling can happen if the sour cream is added too early or if the heat is too high. To avoid this, use full-fat sour cream and ensure it's at room temperature before adding. Stir it in gently after the chicken is cooked, and cook on low heat only. If curdling occurs, the sauce will still taste fine, but the texture may be slightly grainy.
Can this be made ahead and frozen?
Absolutely. Cook the chicken as directed, let it cool completely, and store in freezer-safe containers for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop or microwave. The sauce may separate slightly upon reheating; stir well to bring it back together.
What can be used instead of Hatch green chiles?
If Hatch chiles are unavailable, use any canned diced green chiles. You can also use a roasted and chopped poblano pepper or a mild Anaheim pepper. Adjust the amount based on your heat preference—Hatch chiles can vary in spiciness.
How can the sauce be thickened?
If the sauce is too thin after cooking, remove the chicken and let the sauce simmer on the stovetop or in the slow cooker on high with the lid off for 15–20 minutes. You can also mix a tablespoon of cornstarch with a little water and stir it in, then cook until thickened.

Creamy Salsa Verde Chicken Thighs: 5-Ingredient Crockpot Dinner

Prep 5 minCook 4 hTotal 4 h 5 minServes 6
Creamy salsa verde chicken thighs in a black Crockpot, topped with melted Monterey Jack and sour cream sauce.

Ingredients

  • 6 boneless skinless chicken thighs
  • 1 1/2 cups tomatillo salsa verde
  • 1 can (4 oz) diced Hatch green chiles
  • 1/2 cup sour cream
  • 1 1/2 cups shredded Monterey Jack cheese

Instructions

  1. Place the boneless skinless chicken thighs in the bottom of the Crockpot in a single layer. Pour the tomatillo salsa verde and the diced Hatch green chiles (with their juices) evenly over the chicken. Use a spoon to spread the salsa so the chicken is mostly covered.
  2. Dollop the sour cream over the salsa-covered chicken, then sprinkle the shredded Monterey Jack cheese evenly over the top. Do not stir. The sour cream and cheese will melt and blend during cooking, creating a creamy sauce.
  3. Cover the Crockpot and cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours, until the chicken is cooked through and tender enough to shred easily with a fork. The internal temperature of the thickest thigh should reach 165°F (74°C).
  4. Once the chicken is tender, use two forks to shred the thighs directly in the Crockpot. Stir the shredded chicken into the creamy salsa sauce until well coated. Serve hot with warm flour tortillas, if desired.
