Before you start

Before starting, ensure your slow cooker is clean and positioned on a level, heat-resistant surface near a power outlet. Prepare the ingredients by cubing the chicken breast into uniform one-inch pieces and washing the baby potatoes thoroughly before halving them.

Having all components ready to go makes the assembly process fast and efficient. Ensure you have the ranch seasoning packet and the block of cream cheese at hand so that you can simply layer them into the slow cooker without interruption.

Ingredients at a glance (4)
  • 1 1/2 lb chicken breast, cubed
  • 1 lb baby potatoes, halved
  • 1 packet ranch seasoning
  • 8 oz cream cheese

Instructions

Layering the Ingredients

  1. Assemble the Ingredients
Place the cubed chicken breast into the bottom of the slow cooker. Scatter the halved baby potatoes evenly over the chicken pieces.
Look for Chicken is in a single layer at the bottom.
Tip Keep the chicken pieces uniform in size to ensure they cook at the same rate.

The base of the slow cooker should be covered with the cubed chicken, followed by a layer of halved baby potatoes. The ingredients should look neatly arranged and ready for the seasoning. Ensure the potatoes are distributed evenly to allow them to cook through properly in the juices released by the chicken.

Adding Seasoning and Cream

  1. Season and Add Cream Cheese
Sprinkle the ranch seasoning packet over the potatoes and chicken. Place the block of cream cheese directly in the center of the slow cooker on top of the other ingredients.
Look for Seasoning is distributed over the top.
Tip Do not stir the ingredients yet; the cream cheese will melt into the sauce during the cooking process.

The ranch seasoning should be sprinkled over the top of the potatoes, and the block of cream cheese should sit prominently in the center.

At this stage, the ingredients are ready for the slow cooking process. Do not attempt to stir the mixture, as the slow cooker will do the work of melting the cheese into the sauce.

Cooking and Finishing

  1. Slow Cook and Finish
Cover the slow cooker and cook on low for 4 to 6 hours or on high for 2 to 3 hours. Once finished, stir the mixture until the cream cheese creates a smooth, thick sauce. Ensure the chicken reaches an internal temperature of 165°F (74°C). Let the stew rest for 5 minutes before serving.
Look for The sauce is creamy and the chicken is tender.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the sauce is too thick, stir in a splash of water or chicken broth to reach the desired consistency.

After the cooking time, the stew should look rich and creamy. The chicken should be opaque and cooked through, and the potatoes should be tender. Stir everything together to ensure the cream cheese is fully emulsified into the sauce, creating a thick and velvety consistency that coats all the ingredients perfectly.

Common mistakes

A common mistake is overcrowding the slow cooker, which can prevent the ingredients from cooking evenly or lead to excess liquid that thins the sauce. Ensure the ingredients are spread out in a single layer as much as possible.

Another error is stirring the ingredients too early; the layering method is intentional, as it allows the ranch seasoning and cream cheese to distribute naturally as they heat up. Avoid lifting the lid frequently, as this releases heat and significantly increases the total cooking time.

How to tell it’s done

The chicken is perfectly cooked when it is tender and reaches an internal temperature of 165°F (74°C) when measured with a meat thermometer. The potatoes should be fork-tender, meaning a fork slides into them with no resistance.

When the stew is finished, the cream cheese should be fully melted and incorporated into the juices to form a smooth, thick, and creamy sauce. If the chicken is not yet at temperature or the potatoes are still firm, continue cooking for an additional 20 minutes before checking again.

  • Poultry: 165°F (74°C) in the thickest part
