Before you start

Before beginning the assembly, ensure the oven is fully preheated to 375°F (190°C) to allow for an immediate start to the baking process. Have all ingredients measured and ready, including the shredded chicken and the cheese.

If the chicken has been in the refrigerator, allow it to sit at room temperature for about 15 minutes, but no longer than 30 minutes, to take the chill off. Prepare the baking dish by ensuring it is clean and dry. Having everything organized will make the rolling process smooth and efficient.

Ingredients at a glance (5)
  • 3 cups shredded cooked chicken
  • 8 flour tortillas
  • 2 cups prepared queso sauce
  • 1 cup shredded mexican blend cheese
  • 1/4 cup diced tomatoes

Instructions

Preparing the chicken filling

  1. Prepare the filling
Preheat the oven to 375°F (190°C). In a large mixing bowl, combine the shredded cooked chicken with half of the prepared queso sauce until well coated. Ensure the chicken mixture is evenly distributed for consistent flavor in every bite.
Look for The chicken should be thoroughly coated in the sauce.
Tip Use a warm chicken mixture to make rolling the tortillas easier.

The chicken and sauce mixture should look creamy and uniform, with every strand of chicken evenly coated. It should be easy to scoop and place into the tortillas without excessive liquid pooling at the bottom of the bowl.

Rolling and arranging

  1. Assemble the enchiladas
Spoon a generous amount of the chicken mixture onto each flour tortilla. Roll them tightly and place them seam-side down in a 9x13 inch baking dish. Pour the remaining queso sauce evenly over the top of the rolled tortillas, ensuring they are well covered.
Look for Tortillas should be packed snugly in the baking dish.
Tip Place the seam side down to prevent the enchiladas from unrolling during the baking process.

Each tortilla should be rolled tightly and placed seam-side down in the baking dish. The arrangement should be snug, with the enchiladas touching one another to help maintain their shape while they bake in the oven.

Baking until golden

  1. Bake and garnish
Sprinkle the shredded cheese over the top of the sauced enchiladas. Bake in the preheated oven for 20 minutes, or until the cheese is bubbling and golden brown. The internal temperature of the chicken should reach at least 165°F (74°C). Remove from the oven, garnish with diced tomatoes, and let rest for 5 minutes before serving.
Look for The cheese is bubbling and golden brown on top.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Keep an eye on the oven during the last few minutes to prevent the cheese from burning.

The cheese on top should be melted and bubbling, with areas of golden brown color appearing across the surface. The sauce around the edges of the baking dish should be hot and slightly thickened.

Common mistakes

Avoid overstuffing the tortillas, as this can cause them to tear or burst during the rolling and baking process. Use a consistent amount of chicken for each tortilla to ensure even cooking.

Another common mistake is failing to place the tortillas seam-side down; if the seam is facing up, the enchiladas will likely unroll while in the oven.

Finally, do not skip the resting period after removing the dish from the oven, as this allows the sauce to settle, making it much easier to lift individual enchiladas out of the dish intact.

How to tell it’s done

The enchiladas are done when the cheese topping is visibly bubbling and has turned a rich golden brown. The sauce should be hot and slightly thickened around the edges of the dish.

Since the chicken was pre-cooked, the primary goal is to ensure the entire dish is heated through to an internal temperature of at least 165°F (74°C). If the cheese is browning too quickly before the center is hot, you can loosely tent the dish with aluminum foil for the final few minutes of the baking cycle.
