Tips for success
To prevent the tortillas from tearing during the assembly process, warm them in the microwave for about fifteen to twenty seconds before rolling.
This makes the gluten in the flour tortillas more pliable and easy to work with. If you prefer a crispier texture on the bottom of your enchiladas, you can lightly brush the baking dish with oil before arranging the rolls.
For an even richer flavor profile, you can mix a couple of tablespoons of the white queso sauce directly into the seasoned shredded chicken filling before rolling. This adds extra moisture to the interior and ensures that the creamy cheese flavor is thoroughly integrated throughout the entire dish, from the first bite to the last.
Variations
- Spicy Jalapeno Queso Enchiladas: Stir diced pickled jalapenos into the seasoned chicken filling and use a spicy pepper jack cheese for the topping to add an extra layer of heat.
- Black Bean and Corn Queso Enchiladas: Mix black beans and sweet corn kernels into the shredded chicken filling for added texture, color, and a delicious Southwestern flavor profile.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freeze assembled, unbaked enchiladas without sauce for up to 2 months. Thaw overnight in the fridge before baking.
- Reheat
- Reheat individual portions in the microwave for 1-2 minutes, or cover with foil and bake at 350°F (175°C) for 15 minutes.
Let the enchiladas cool completely at room temperature for no more than two hours. Transfer any leftover enchiladas to an airtight container, or cover the baking dish tightly with plastic wrap or aluminum foil. Store the leftovers in the refrigerator, where they will keep well and retain their delicious flavors for up to three days.
You can easily assemble these enchiladas up to one day in advance. Prepare the chicken filling, roll the tortillas, and arrange them in the baking dish.
Cover the dish tightly and store it in the refrigerator. When ready to serve, pour the queso sauce and shredded cheese over the top, then broil as directed, adding a few extra minutes if starting cold.
Serving ideas
Serve these rich and creamy queso chicken enchiladas hot, straight from the baking dish. Use a wide spatula to carefully lift two enchiladas onto a warm serving plate, ensuring you capture plenty of the bubbly cheese topping and velvety sauce.
The vibrant diced tomatoes and fresh chopped cilantro on top provide a beautiful presentation.
These enchiladas are incredibly satisfying on their own, but they also pair wonderfully with classic side dishes.
Serve them alongside warm Mexican rice, seasoned black beans, or a crisp green salad with a lime-cilantro vinaigrette to balance the richness. A side of fresh guacamole or a dollop of sour cream makes an excellent addition.

Creamy Queso Chicken Enchiladas with Bubbly Melted Cheese

Ingredients
- 1 lb boneless skinless chicken breasts
- 1 tbsp taco seasoning
- 8 flour tortillas
- 2 cups white queso sauce
- 1 cup shredded Monterey Jack cheese
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
Instructions
- Place the boneless skinless chicken breasts in a saucepan and cover with water. Bring to a boil, then reduce heat and simmer until the chicken reaches an internal temperature of 165°F (74°C), about 15 minutes.
- Transfer the cooked chicken to a cutting board. Use two forks to shred the chicken into thin, bite-sized pieces, then toss thoroughly with the taco seasoning until evenly coated.
- Preheat the oven broiler to high. Lay out the flour tortillas on a clean work surface, portion the seasoned chicken evenly down the center of each, and roll them up tightly.
- Place the rolled tortillas seam-side down in a 9x13-inch baking dish. Pour the velvety white queso sauce evenly over the top, completely smothering the tortillas, and sprinkle with the shredded Monterey Jack cheese.
- Place the baking dish under the preheated broiler. Broil for 4 to 5 minutes, watching closely, until the cheese topping is completely melted, bubbly, and beautifully browned in spots.
- Remove the baking dish from the oven. Scatter the fresh diced tomatoes and chopped cilantro over the hot, bubbly cheese. Let rest for 5 minutes before serving.
