Before you start

Before beginning, ensure that your oven is preheated to the required temperature and that you have a clean workspace ready. Cut the chicken into consistent bite-sized pieces to ensure they cook through at the same rate as the rice.

Have your baking dish, cheese, and queso ready to go so that the assembly process is swift. Keep raw chicken in the refrigerator until the very last moment before cooking, and wash your hands, sink, and surfaces thoroughly after handling raw poultry to maintain a safe cooking environment.

Ingredients at a glance (5)
  • 2 lbs chicken breasts, cut into bite-sized pieces
  • 1 1/2 cups long-grain white rice, uncooked
  • 1 cup prepared queso dip
  • 2 cups shredded cheddar cheese
  • fresh chopped herbs, for serving

Instructions

Layering the ingredients

  1. Prepare the chicken and rice base
Preheat the oven to 375°F (190°C). In a large mixing bowl, combine the raw chicken pieces and the uncooked rice. Spread this mixture evenly across the bottom of a greased 9x13 inch baking dish. Ensure the chicken is distributed well to promote even cooking.
Look for The chicken and rice mixture should be spread in a uniform layer across the dish.
Tip Adding a bit of broth or water can help ensure the rice cooks through properly during the baking process.

At the end of this phase, the chicken and rice should be evenly distributed in the dish. There should be no large gaps, and the mixture should look ready to be coated with the sauce. Ensure the chicken pieces are relatively uniform in size to help them finish cooking at the same time as the rice.

Adding the queso sauce

  1. Add the creamy queso layer
Pour the prepared queso dip over the chicken and rice mixture in the baking dish. Use a spatula to spread the queso evenly, covering the ingredients to keep them moist while they bake. Cover the baking dish tightly with aluminum foil to trap the steam.
Look for The queso should form a thick, even blanket over the chicken and rice.
Tip Ensure the foil is sealed well around the edges of the dish to prevent moisture from escaping during the initial bake.

The queso should completely blanket the chicken and rice mixture, creating a smooth, even layer. Once covered with foil, the dish should be sealed tightly. Check that no corners of the baking dish are exposed, as this is critical to ensure the steam stays inside and cooks the rice thoroughly.

Final bake and melt

  1. Bake and melt the cheese
Bake the covered casserole for 30 minutes. Remove the foil, sprinkle the shredded cheddar cheese over the top, and return to the oven for an additional 10 minutes until the cheese is bubbling and golden. Ensure the chicken reaches an internal temperature of 165°F (74°C). Let the dish rest for 5 minutes before garnishing with fresh herbs and serving.
Look for The cheese should be melted and bubbling, with a golden brown top.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If extra browning on the cheese is desired, you can place the dish under the broiler for 1 to 2 minutes while watching closely to prevent burning.

The casserole should be bubbling with a golden, melted cheese crust. The chicken must reach 165°F (74°C). The rice should be tender, and the sauce should be thick and creamy.

If the top needs more color, the broiler can be used, but only for a very short period to prevent the cheese from becoming bitter.

Common mistakes

A common mistake is using rice that is not suitable for this method, such as instant rice, which can turn mushy, or arborio rice, which might absorb too much liquid. Stick to standard long-grain white rice for the best results.

Another error is failing to cover the dish tightly with foil, which prevents the rice from steaming properly. Ensure the foil is sealed well; if steam escapes, the rice will remain hard and the chicken may dry out before the dish is fully cooked.

How to tell it’s done

The casserole is done when the cheese is fully melted and golden brown on top, and the rice is tender and has absorbed most of the liquid. Most importantly, use an instant-read meat thermometer to verify that the chicken has reached a safe internal temperature of 165°F (74°C).

The edges of the casserole should be bubbling vigorously, and the center should be heated through. Allow the dish to rest for 5 minutes after removing it from the oven to let the sauce set slightly before serving.

  • Poultry: 165°F (74°C) in the thickest part
