Tips for success

To achieve the ultimate creamy texture, always shred the cheddar cheese from a block rather than buying pre-shredded bags.

Block cheese melts into a much smoother, glossier sauce because it lacks the starchy coatings used to prevent pre-shredded cheese from sticking together in the package. This small step makes a massive difference in the final consistency of the casserole, ensuring a perfect cheese pull.

If the sauce appears too thick after combining all the ingredients, a splash of hot pasta water can be added to loosen it. Saving a quarter cup of pasta water before draining the noodles is a great habit, as the starch in the water helps thin the sauce while maintaining its velvety, emulsified texture without making it watery or bland.

Variations

  • Spicy Cheddar Casserole: Substitute sharp cheddar with pepper jack cheese and add a pinch of cayenne pepper to the beef for a spicy kick.
  • Smoky Bacon Twist: Stir in crispy crumbled bacon along with the cheddar cheese to add a wonderful smoky flavor and crunchy texture.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
Freezer
Freezing is not recommended as the cream-based sauce may separate and become grainy upon thawing.
Reheat
Reheat gently on the stovetop over low heat, adding a splash of milk or cream to restore the creamy texture.

Allow any leftover casserole to cool completely at room temperature for no more than two hours to ensure food safety. Transfer the leftovers into a clean, airtight container and seal it tightly. Store the container in the refrigerator to keep the pasta fresh and prevent the dairy-based sauce from spoiling over the next few days.

This casserole can be partially assembled ahead of time up to the point of adding the cheese. Cook the pasta and brown the beef, combine them with the cream, and store the mixture in an airtight container in the refrigerator.

When ready to serve, heat the mixture gently on the stove before folding in the cheese to melt it fresh and creamy.

Serving ideas

Serve this comforting casserole hot, straight from the pot, while the cheese sauce is at its absolute peak of creaminess.

It pairs wonderfully with a simple, crisp green salad tossed in a light vinaigrette to help balance the rich, savory flavors of the cheddar and beef. Some warm, crusty garlic bread is also excellent for scooping up any extra sauce left on the plate.

For a complete and satisfying family dinner, roasted vegetables like broccoli, Brussels sprouts, or green beans make a fantastic side dish.

The bright, roasted flavors complement the deep richness of the casserole beautifully. Serve the meal in shallow bowls to keep the pasta and sauce warm and contained while enjoying every single cheesy, comforting bite.

Frequently asked questions

Can whole milk be used instead of heavy cream?
Whole milk can be used, but the sauce will be much thinner and less rich. To compensate, whisk a tablespoon of flour or cornstarch into the milk before heating to help it thicken.
Why did the cheese sauce turn out grainy?
Graininess occurs when the cheese is heated too quickly or at too high a temperature, causing the proteins to clump. Always melt the cheese over low heat or residual heat.
Can other pasta shapes be used?
Yes, pasta shapes with ridges or hollows like penne, fusilli, or medium shells work excellently because they trap and hold the creamy cheese sauce very well.

Ingredients

  • 12 oz rotini pasta
  • 1 lb ground beef
  • 1 1/2 cups heavy cream
  • 2 cups shredded cheddar cheese

Instructions

  1. Bring a large pot of water to a rolling boil over high heat. Add the rotini pasta and cook according to the package instructions until it is just al dente, which typically takes about 8 to 10 minutes. Drain the pasta thoroughly in a colander and set it aside, ensuring not to rinse it so the starch remains on the noodles.
  2. In a large stainless steel pot over medium-high heat, add the ground beef. Cook the beef, breaking it up into small pieces with a wooden spoon, for about 6 to 8 minutes. Ensure the beef is fully browned and has cooked to a safe minimum internal temperature of 160°F (71°C). Drain any excess grease from the pot if necessary.
  3. Pour the heavy cream directly into the pot with the browned ground beef. Reduce the heat to medium-low and stir the mixture continuously, scraping up any browned bits from the bottom of the pot. Let the cream simmer gently for 2 to 3 minutes until it is thoroughly heated through and begins to steam.
  4. Reduce the heat to low. Add the cooked rotini pasta and the shredded cheddar cheese to the pot with the cream and beef. Stir the ingredients together thoroughly using a large spoon, folding the cheese and pasta into the warm cream until the cheese begins to melt and coat the noodles.
  5. Continue to stir the casserole over low heat for another 1 to 2 minutes until the cheese is completely melted, forming a smooth, glossy sauce that fully clings to the pasta. Once the casserole is bubbling gently and the sauce is uniform, remove the pot from the heat and let it rest for a few minutes before serving.
