Before you start

Before starting, ensure your slow cooker is clean and positioned on a level, heat-resistant surface away from any edges. Prepare the poblano peppers by rinsing them under cool running water, removing the stems and seeds, and dicing them into half-inch pieces.

Have your chicken breasts ready by trimming any visible fat. Gather the chicken broth and the taco seasoning packet so that everything is within reach once you begin the assembly process, ensuring the cooking process remains efficient and organized.

Ingredients at a glance (5)
  • 1 1/2 lb boneless skinless chicken breasts
  • 2 poblano peppers, diced
  • 1 packet taco seasoning
  • 2 cups chicken broth
  • fresh cilantro, for serving

Instructions

Assembly Phase

  1. Prepare and combine ingredients
Place the raw chicken breasts into the base of the slow cooker. Scatter the diced poblano peppers evenly over the top of the chicken to ensure even flavor distribution during the cooking process.
Look for Chicken is arranged in a single layer at the bottom of the cooker.
Tip Ensure the peppers are diced to a uniform size for consistent texture.

At this stage, the slow cooker contains the raw chicken and diced peppers. Everything should be arranged cleanly, and the ingredients should appear fresh. Ensure the chicken is not overly packed, allowing for proper air and liquid circulation.

This is the moment to double-check that your slow cooker is plugged in and set to the low setting, preparing the environment for the slow braising process to begin without interruption.

Seasoning Phase

  1. Season and add liquid
Sprinkle the entire packet of taco seasoning over the chicken and peppers. Pour the chicken broth over the ingredients, ensuring the liquid reaches the bottom of the slow cooker to start the braising process.
Look for Liquid covers the chicken and seasoning is well distributed.
Tip Pour the broth slowly to avoid splashing the seasoning out of the cooker.

The seasoning and broth have been added. The liquid should just barely cover the chicken pieces, and the taco seasoning should be visible as a light dusting over the peppers and meat. At this point, ensure the lid is sealed tightly to lock in moisture and heat. The kitchen should begin to smell faintly of the aromatics from the peppers as the slow cooker starts to warm up.

Cooking and Finishing Phase

  1. Cook and serve
Cover and cook on low for 4 hours or until the chicken is tender. Once finished, shred the chicken directly in the cooker. Ensure the chicken reaches an internal temperature of 165°F (74°C). Garnish with fresh cilantro before serving in bowls.
Look for Chicken shreds easily with a fork and the liquid is steaming.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Use two forks to shred the meat efficiently while it is still warm.

The chicken is now cooked and has been shredded. The chowder should look creamy and consistent, with the shredded chicken fibers integrated throughout the broth. The peppers should be tender and blended. Ensure the final temperature is safe and the texture is to your preference before serving. If the mixture appears too thick, a small amount of warm broth can be stirred in to reach your desired consistency.

Common mistakes

A common mistake is overcrowding the slow cooker or using cuts of meat that are too large, which can lead to uneven cooking. Ensure the chicken is placed in a single layer to promote uniform heat distribution.

Another frequent error is opening the lid too often; this causes significant heat loss and can result in the dish taking much longer to reach the appropriate temperature. Finally, ensure the seasoning is distributed evenly over all ingredients rather than dumped in one spot to avoid flavor pockets.

How to tell it’s done

The chowder is fully cooked when the chicken is fork-tender and pulls apart easily with minimal effort. Using a digital meat thermometer, verify that the thickest part of the chicken has reached an internal temperature of at least 165°F (74°C).

The liquid should be steaming and slightly thickened, with the poblano peppers soft and fully incorporated into the broth. Allow the dish to rest for five minutes after shredding to let the flavors stabilize before serving.
