Before you start

Before beginning, ensure all ingredients are at room temperature, unless otherwise specified. Preheat the oven according to the cake mix instructions. Prepare the 9x13 baking dish by lightly greasing it to ensure easy serving.

Have your electric mixer and a clean mixing bowl ready. If you are making the cake from scratch, prepare the batter ahead of time so it is ready to go into the oven immediately after preheating.

Ingredients at a glance (4)
  • 1 box yellow cake mix, prepared as directed
  • 1 cup caramel sauce
  • 2 cups heavy whipping cream
  • 1/2 cup chopped pecans

Instructions

Baking and Soaking

  1. Prepare the cake base
Bake the yellow cake according to the box instructions in a 9x13 inch baking dish. Once removed from the oven, use the handle of a wooden spoon to poke holes all over the warm cake surface.
Look for holes are evenly spaced
Tip Ensure the cake is still warm when poking to allow the caramel to seep deep into the crumb.
  2. Soak with caramel
Pour the caramel sauce evenly over the warm cake, making sure it fills the holes created. Allow the cake to cool completely at room temperature before adding the topping.
Look for caramel is fully absorbed
Tip Spread with a spatula if needed to ensure every corner gets saturated.

The cake should be golden brown and fragrant. When poked, the holes should be deep and clean. The caramel sauce should be poured slowly to ensure even distribution and absorption, leaving the cake looking dark and moist in the areas where the sauce has settled into the structure of the sponge.

Whipping the Cream

  1. Whip the cream
Using an electric mixer, whip the heavy cream in a chilled bowl until stiff peaks form. Be careful not to overwhip, as this can turn the cream into butter.
Look for cream holds stiff peaks
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Chill the mixing bowl and beaters in the freezer for ten minutes beforehand for faster whipping.

The whipped cream should be thick, glossy, and hold stiff peaks. It should look light and airy, not grainy or separated. If the cream looks like it is starting to turn yellow or clump, stop mixing immediately to avoid over-whipping and turning the mixture into butter.

Final Assembly

  1. Assemble and serve
Spread the whipped cream over the cooled caramel-soaked cake in an even layer. Sprinkle the chopped pecans over the top. Slice and serve immediately or keep chilled until ready to portion.
Look for cream has even coverage
Tip Use an offset spatula to smooth the whipped cream for a professional finish.

The whipped cream should be spread smoothly across the cake. The pecans should be scattered evenly to provide a uniform crunch.

The finished dessert should look inviting, with the contrast between the dark caramel-soaked cake and the bright, white whipped cream being clearly visible when sliced.

Common mistakes

A common mistake is adding the whipped cream while the cake is still warm, which will cause the cream to melt and create a soggy layer. Always ensure the cake has cooled completely to room temperature before proceeding with the topping.

Another error is using a caramel sauce that is too thin, which can make the cake mushy. Stick to a thick, quality caramel to maintain the desired texture and structural balance throughout the dish.

How to tell it’s done

The cake is done when a toothpick inserted into the center comes out clean or with only a few moist crumbs attached. The surface should spring back lightly when touched.

For the whipped cream, it is finished when it holds its shape firmly on the whisk without drooping. The caramel should be fully absorbed into the cake holes, and the topping should be evenly spread across the surface before serving.

  • Egg dishes: 160°F (71°C) in the thickest part
