Tips for success
For the best texture, use chicken cutlets that are about 1/2 inch thick. If they are thicker, you can pound them to an even thickness. This ensures they cook evenly and stay juicy.
If you prefer a thicker sauce, you can remove the chicken and whisk a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) into the sauce, then cook for 10 more minutes on HIGH until thickened.
The sauce is versatile — try adding a squeeze of lemon juice or a pinch of red pepper flakes for a brighter, spicier finish. You can also stir in fresh herbs like thyme or parsley at the end for a pop of color and freshness.
If you have leftovers, the sauce will thicken further in the fridge; just add a splash of chicken broth or water when reheating.
Variations
- Add Mushrooms: Add 8 oz sliced cremini mushrooms along with the shallots in step 1. They will release their liquid and add an earthy depth to the sauce. No other changes needed.
- Spicy Kick: Stir 1/2 teaspoon crushed red pepper flakes into the honey-mustard mixture before adding to the chicken. This adds a gentle heat that complements the sweetness.
- Herb Infusion: Add 2 sprigs of fresh thyme and 1 bay leaf to the slow cooker before cooking. Remove them before serving. The herbs add a subtle savory note that elevates the dish.
- Use Chicken Thighs: Swap the chicken breast cutlets for 1 1/2 lb boneless, skinless chicken thighs. They will be even more tender and forgiving in the slow cooker. The cooking time remains the same.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. The sauce may thicken; add a splash of broth when reheating.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently in the microwave or on the stovetop over low heat, stirring occasionally, until heated through.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken when chilled, so you may want to add a little broth or water when reheating to loosen it.
Reheat gently in the microwave or on the stovetop over low heat, stirring occasionally, until heated through.
You can assemble the ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed.
This makes the recipe even more convenient for busy days. If you do this, you may need to add 30 minutes to the cooking time since you're starting from cold.
Serving ideas
Serve the chicken and sauce over fluffy white rice, brown rice, or your favorite grain. The sauce is also delicious over pasta, mashed potatoes, or even with crusty bread for dipping. A simple green salad with a light vinaigrette is a great side to balance the richness of the dish.
For a low-carb option, serve the chicken over steamed vegetables or cauliflower rice. The sauce is so flavorful that you won't miss the carbs. Garnish with fresh chives or parsley for a touch of color and freshness. This dish is also excellent with roasted asparagus or green beans on the side.

Creamy Parmesan Honey Dijon Chicken Cutlets

Ingredients
- 1 1/2 lb boneless, skinless chicken breast cutlets
- 1/4 cup whole-grain Dijon mustard
- 3 tbsp honey
- 2 shallots, thinly sliced
- 8 oz cream cheese, softened
- 1/2 cup freshly grated Parmesan cheese
Instructions
- Place the chicken breast cutlets in an even layer in the bottom of a 6-quart slow cooker. Spoon the whole-grain Dijon mustard over the chicken and spread it gently to coat the tops. Drizzle the honey over the mustard, then scatter the sliced shallots evenly over the chicken.
- Place the block of softened cream cheese in the center of the slow cooker, on top of the chicken. Sprinkle the freshly grated Parmesan over the entire surface, covering the cream cheese and the chicken as much as possible.
- Cover the slow cooker and cook on LOW for 4 hours, or until the chicken is cooked through and tender. The chicken is done when it reaches an internal temperature of 165°F (74°C) in the thickest part. Avoid lifting the lid during cooking to keep the heat steady.
- Once the chicken is cooked, gently stir the sauce in the slow cooker to combine the melted cream cheese, Parmesan, honey, and mustard into a smooth, velvety sauce. Be careful not to break up the chicken cutlets too much.
- Spoon the chicken and sauce over fluffy herb rice or your favorite grain. Serve hot, with extra sauce spooned over the top.
