Tips for success
For the best flavor, take the time to slice the onions thinly and evenly. This helps them cook down and caramelize at the same rate, creating a consistent sweetness throughout the sauce.
If you have a mandoline, use it for perfectly uniform slices. Otherwise, a sharp chef's knife and a steady hand will do the trick. The thinner the onions, the more they will melt into the sauce, adding body and flavor.
When shredding the chicken, do it directly in the slow cooker so the shreds can soak up the sauce. Use two forks to pull the meat apart, and then stir it gently to coat every piece. If you prefer chunkier chicken, shred less; for a finer texture, take your time. The shredded chicken will absorb the flavors beautifully, making every bite rich and savory.
Variations
- Add Mushrooms: Sauté 8 oz sliced mushrooms in butter until golden, then add them to the slow cooker with the onions. The earthy flavor of mushrooms pairs beautifully with the French onion and Parmesan.
- Use Chicken Thighs: Swap the chicken breasts for boneless, skinless chicken thighs for an even more tender and juicy result. Thighs have a higher fat content, which keeps them moist during the long cooking time.
- Make It Spicy: Add a pinch of red pepper flakes or a dash of hot sauce to the slow cooker before cooking. A little heat will cut through the richness and add a subtle kick.
- Serve Over Rice: Instead of noodles, serve the creamy chicken over steamed white or brown rice. The rice absorbs the sauce beautifully and makes for a gluten-free option if you use gluten-free soup.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth or water if needed to loosen the sauce.
- Freezer

- Reheat

Store any leftovers in an airtight container in the refrigerator for up to 4 days. The chicken and sauce will keep well, and the flavors may even deepen overnight. Reheat gently on the stovetop or in the microwave, adding a splash of chicken broth or water if the sauce has thickened too much. The dish is just as delicious the next day, making it a great option for meal prep or leftovers.
This recipe is perfect for making ahead. You can assemble the raw ingredients in the slow cooker insert and store it in the refrigerator overnight, then start cooking the next day.
Or, cook the full dish and keep it in the refrigerator for up to 4 days. The flavors meld and develop even more over time, so it's a great option for a make-ahead meal. Simply reheat and serve over fresh noodles.
Serving ideas
Serve this creamy Parmesan French onion chicken over a bed of hot buttered egg noodles for the most classic and satisfying presentation. The noodles catch the rich, velvety sauce and provide a comforting base for the tender chicken.
You can also spoon it over mashed potatoes or rice, or even serve it open-faced on toasted crusty bread to mimic a French onion soup experience. A side of steamed green beans or a crisp salad would round out the meal nicely.
For a company-worthy presentation, transfer the chicken and sauce to a large serving platter and garnish with a sprinkle of fresh thyme or parsley. Set the buttered noodles in a separate bowl so guests can serve themselves.
The dish is hearty enough to be a main course on its own, but it also pairs well with a light vegetable side. Leftovers are excellent in sandwiches or over baked potatoes the next day.

Ingredients
- 3 lb boneless skinless chicken breasts
- 2 cups thinly sliced Vidalia onions
- 1 can (10.5 oz) condensed French onion soup
- 8 oz cream cheese, softened
- 1 cup freshly grated Parmigiano-Reggiano
- 12 oz buttered egg noodles, for serving
Instructions
- Place the chicken breasts in a single layer in the bottom of a 6-quart slow cooker. Scatter the sliced onions evenly over the chicken. Pour the condensed French onion soup over the top, making sure to cover the chicken and onions as much as possible.
- Place the softened cream cheese in chunks over the top of the chicken and onions. Sprinkle the grated Parmigiano-Reggiano evenly over the whole mixture.
- Cover the slow cooker and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until the chicken is fork-tender and easily shreds. The internal temperature of the chicken should reach 165°F (74°C).
- Using two forks, shred the chicken directly in the slow cooker. Stir the shredded chicken into the sauce, making sure it is well coated. If the sauce seems too thick, stir in a splash of chicken broth or water.
- Cook the buttered egg noodles according to the package directions. Serve the creamy chicken over a bed of hot buttered noodles, spooning extra sauce over the top.
