Tips for success

For the most flavorful sauce, use a good-quality condensed golden mushroom soup. The brand can make a difference in salt and flavor.

If you prefer a lighter sauce, you can use reduced-fat cream cheese, but the texture may be slightly less rich. Freshly grated Parmesan melts more smoothly than pre-shredded, which often contains anti-caking agents.

To make this recipe even easier, you can skip shredding the chicken and serve it in larger chunks.

If you like a smoother sauce, you can use an immersion blender to puree some of the potatoes before adding the chicken back. For a touch of brightness, squeeze a little lemon juice over the top before serving.

Variations

  • Add Vegetables: Stir in 2 cups of frozen peas and carrots during the last 30 minutes of cooking. They will warm through and add color and sweetness to the creamy sauce.
  • Use Chicken Thighs: Swap the chicken breasts for boneless, skinless chicken thighs. They are more forgiving and stay very moist. Shred them the same way after cooking.
  • Spicy Kick: Add 1/2 teaspoon of crushed red pepper flakes or a diced jalapeño along with the other ingredients for a subtle heat that balances the creamy sauce.
  • Herb Infusion: Add 2 sprigs of fresh thyme and 1 bay leaf to the slow cooker before cooking. Remove them before serving for an herby aroma that elevates the dish.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; add a splash of chicken broth or milk when reheating to loosen it. Reheat gently in the microwave or on the stovetop until hot throughout.

This dish can be assembled the night before. Place all ingredients except the noodles in the slow cooker insert, cover, and refrigerate overnight. In the morning, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cooking time to account for the cold start.

Serving ideas

Serve this creamy chicken and potato mixture over a bed of warm buttered egg noodles for a classic, satisfying pairing. The noodles soak up the velvety sauce, making every bite rich and comforting.

You can also serve it alongside crusty bread to mop up every last drop, or over fluffy white rice for a different twist.

For a lighter option, spoon the mixture over steamed green beans or roasted asparagus. The creamy sauce works beautifully with vegetables, turning them into a hearty side.

Garnish with a sprinkle of fresh parsley or chives for color and a hint of freshness. This dish is complete on its own, but a simple green salad with a tangy vinaigrette would balance the richness.

Frequently asked questions

Can this recipe be made in advance?
Yes, the slow cooker mixture can be assembled the night before and refrigerated. In the morning, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cooking time. The cooked dish also reheats well for leftovers.
Why is the sauce thin after cooking?
If the sauce seems thin, it may be because there is excess moisture from the chicken or potatoes. To thicken it, remove the lid and cook on HIGH for 10–15 minutes to let some liquid evaporate. You can also mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it in, cooking for a few more minutes.
Can this recipe be made without cream cheese?
Cream cheese is essential for the velvety texture and tangy flavor. For a dairy-free alternative, use a plant-based cream cheese, but note that the flavor and texture will differ. The sauce may be less rich.
What can be used instead of golden mushroom soup?
Condensed cream of mushroom soup is the closest substitute. For a different flavor, try cream of chicken soup or a can of cheddar cheese soup. Adjust seasoning accordingly, as the soup contributes salt and flavor.
How long does this dish keep in the refrigerator?
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or microwave, adding a splash of broth or milk to loosen the sauce if needed.

Creamy Parmesan Chicken and Baby Potato Crockpot Dinner

Prep 10 minCook 6 hTotal 6 h 10 minServes 6
Creamy Parmesan chicken and baby potatoes in a slow cooker, topped with melted cheese and herbs.

Ingredients

  • 1 1/2 lb boneless skinless chicken breasts
  • 1 1/2 lb baby Yukon Gold potatoes, halved
  • 1 can (10.5 oz) condensed golden mushroom soup
  • 8 oz cream cheese, softened
  • 1/2 cup freshly grated Parmigiano-Reggiano cheese
  • 12 oz buttered egg noodles, cooked

Instructions

  1. Place the chicken breasts in the bottom of a 6-quart slow cooker in a single layer. Scatter the halved baby potatoes around and between the chicken pieces. Pour the condensed golden mushroom soup evenly over the top, then add the softened cream cheese in dollops and sprinkle with the grated Parmesan.
  2. Cover the slow cooker and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the chicken is cooked through and the potatoes are fork-tender. The chicken should register at least 165°F (74°C) in the thickest part.
  3. Remove the chicken breasts to a cutting board. Using two forks, shred the chicken into bite-size pieces. Return the shredded chicken to the slow cooker and stir gently to combine with the sauce and potatoes. The sauce should be creamy and thick; if it seems thin, let it cook uncovered for 10–15 minutes to thicken.
  4. To serve, place a generous portion of cooked buttered egg noodles on each plate. Spoon the creamy chicken and potato mixture over the noodles, making sure to get plenty of the velvety sauce. Serve hot.
