Tips for success

To enhance the presentation, serve the chicken over a bed of steamed rice or pasta, which will help absorb the excess sauce. If a more intense flavor is desired, adding a small amount of freshly grated parmesan cheese just before serving can add a salty, nutty note that complements the artichoke hearts perfectly. Always ensure the chicken is shredded while still warm, as it becomes easier to work with when the fibers are soft and the sauce is fluid.

If you find the sauce is becoming too oily, ensure you have drained the artichoke hearts thoroughly before adding them to the slow cooker. Excess brine or oil from the can can interfere with the cream cheese, potentially causing the sauce to separate.

If separation occurs, whisking the sauce vigorously with a fork or a small whisk can often help emulsify the fats and liquids back into a smooth, creamy consistency before you serve the meal to your guests.

Variations

  • Spinach Artichoke Chicken: Add one cup of fresh baby spinach during the final 30 minutes of cooking. The spinach will wilt into the sauce, adding vibrant color and a mild earthy flavor that pairs perfectly with the artichokes and cream cheese.
  • Spicy Artichoke Chicken: Incorporate one teaspoon of red pepper flakes or a dash of hot sauce along with the Italian seasoning. This adds a subtle warmth that cuts through the creaminess, providing a pleasant contrast for those who enjoy a bit of heat.

Storage and make-ahead

Fridge
Keep in a sealed container for up to 3 days.
Freezer
Freeze for up to 2 months in a freezer-safe container.
Reheat
Reheat gently on the stovetop or in the microwave until reaching 165°F (74°C).

Store any leftovers in an airtight container to maintain moisture. Ensure the chicken cools for no more than two hours at room temperature before being moved to the refrigerator. Keeping the chicken in a sealed container prevents it from drying out and helps it stay fresh for up to three days. When storing, try to keep the sauce and chicken together, as the sauce helps protect the texture of the chicken meat during the cooling and storage process.

This dish is excellent for preparation ahead of time, as the flavors often deepen after sitting for a few hours. You can prepare the raw ingredients in the slow cooker insert, cover it, and keep it in the refrigerator for up to 24 hours before cooking.

When ready, simply place the insert into the slow cooker base and start the cooking cycle. Note that the total cooking time may increase slightly if the ingredients are cold when the cooking process begins.

Serving ideas

Serve this chicken hot, ideally alongside a fresh green salad or roasted vegetables to contrast the richness of the creamy sauce. The neutral flavor of roasted asparagus or steamed broccoli works particularly well here, as it does not compete with the savory artichoke and parmesan profile.

Portion the chicken onto plates and spoon any extra sauce from the slow cooker over the top to ensure every bite is flavorful, moist, and satisfying for everyone at the table.

For a more complete meal, consider serving the chicken alongside crusty bread or garlic toast, which are perfect for mopping up any remaining sauce on the plate.

If you prefer a lighter side, a simple cucumber salad with a vinaigrette dressing provides a crisp, refreshing balance to the creamy, heavy nature of the main dish. Regardless of the side chosen, the focus should remain on the contrast between the tender, creamy chicken and the fresh, crunchy elements of the meal.

Frequently asked questions

Can this be made in a pressure cooker?
Yes, this can be adapted for a pressure cooker. Reduce the cooking time to approximately 15 minutes on high pressure, followed by a natural release. Ensure the chicken reaches 165°F (74°C) before shredding.
Why is the sauce separated?
Separation often occurs if the heat is too high or if the ingredients contained too much excess liquid. If this happens, whisk the sauce vigorously to re-emulsify the fats before serving.
Can other types of cream cheese be used?
Using full-fat cream cheese is recommended for the best texture and stability. Other versions often have higher water content, which can result in a thinner, less creamy, and potentially grainier sauce.

Slow cooker filled with creamy chicken and artichoke hearts.

Ingredients

  • 4 pieces chicken breasts, boneless and skinless
  • 1 can chopped artichoke hearts, drained
  • 1 packet Italian seasoning
  • 8 oz cream cheese, softened

Instructions

  1. Place the chicken breasts into the bottom of the slow cooker. Scatter the chopped artichoke hearts evenly over the chicken. Sprinkle the Italian seasoning packet over the top of the artichokes and place the block of cream cheese in the center.
  2. Cover the slow cooker with the lid. Cook on low heat for 4 hours until the chicken is tender and fully cooked through. The cream cheese will melt into the juices to form a thick, glossy sauce around the chicken.
  3. Once cooked, use two forks to gently shred the chicken directly in the slow cooker, incorporating the melted cream cheese and artichokes into a smooth sauce. Let the mixture rest for 5 minutes before serving hot on plates.
