Tips for success
For the smoothest filling, beat the cream cheese and sugar until completely lump-free before adding the mango puree. If the cream cheese is too cold, it will form small lumps; let it sit at room temperature for 30 minutes before mixing.
When folding in the whipped coconut cream, use a spatula and cut through the center, then sweep around the bowl until just combined. Overfolding can deflate the mixture, resulting in a denser cheesecake.
To ensure clean slices, use a long, thin knife and wipe it with a damp paper towel between cuts. For an extra touch, garnish each slice with fresh passionfruit seeds or a few thin mango slices before serving.
If the cheesecake is difficult to remove from the pan, run a warm knife around the edge before releasing the springform. Store leftovers in the refrigerator, covered, for up to 5 days.
Variations
- Lime Mango Cheesecake: Add the zest of 2 limes to the filling and replace the passionfruit glaze with a lime curd. The citrus brightens the mango and adds a refreshing twist.
- Berry Swirl Cheesecake: Before chilling, drop spoonfuls of raspberry or strawberry puree onto the filling and swirl with a knife. Use the same passionfruit glaze or omit it for a berry-forward dessert.
- Chocolate Coconut Crust: Replace 1/2 cup of graham cracker crumbs with crushed chocolate cookies and add 2 tablespoons of cocoa powder to the crust. The chocolate pairs well with mango and coconut.
- Vegan Mango Cheesecake: Use vegan cream cheese and a plant-based gelatin substitute (such as agar-agar) in the same amounts. Ensure the coconut cream and crust ingredients are vegan-friendly.
Storage and make-ahead
- Fridge
- Keep the cheesecake refrigerated at all times; it will stay fresh for up to 5 days when covered.
- Freezer
- Freeze the cheesecake (without the glaze) for up to 2 months. Wrap tightly in plastic wrap and foil.
- Reheat
- This no-bake cheesecake should not be reheated; serve cold or at cool room temperature.
Store the cheesecake in the refrigerator, loosely covered with plastic wrap or in an airtight container, for up to 5 days. Keep it chilled until ready to serve, as the filling will soften at room temperature. The passionfruit glaze may weep slightly over time, but the flavor remains fresh.
This cheesecake is an excellent make-ahead dessert. Prepare it up to 2 days in advance and keep it refrigerated, covered. The gelatin ensures it holds its shape, and the flavors meld and deepen over time. Add the passionfruit glaze no more than 24 hours before serving to keep it glossy and vibrant.
Serving ideas
Serve the cheesecake chilled, straight from the refrigerator, for the best texture and clean slices. Let it sit at room temperature for 5 minutes before serving to take the chill off, but do not let it soften too much.
A dollop of whipped cream or a few fresh mango cubes on the side complement the tropical flavors without overpowering them.
This dessert is perfect for summer gatherings, birthdays, or any celebration where you want a showstopper that doesn't require turning on the oven.
Pair it with a cold glass of iced tea or a light sparkling wine. The bright mango and passionfruit notes are refreshing and satisfying after a rich meal.

No-Bake Mango Passionfruit Cheesecake with Toasted Coconut Crust

Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/2 cup sweetened shredded coconut, toasted
- 1/2 cup unsalted butter, melted
- 400 g Alphonso mango puree
- 500 g cream cheese, softened
- 250 ml whipped coconut cream
- 100 g granulated sugar
- 12 g unflavored gelatin powder, bloomed
- 120 ml passionfruit jelly
Instructions
- In a medium bowl, combine the graham cracker crumbs, toasted shredded coconut, and melted butter. Stir until the mixture is evenly moistened and holds together when pressed. Press the mixture firmly into the bottom of a 9-inch springform pan, using the bottom of a measuring cup to compact it evenly. Place the pan in the refrigerator while preparing the filling.
- Sprinkle the gelatin powder over 3 tablespoons of cold water in a small bowl. Let it sit for 5 minutes until it swells and becomes spongy. Then, gently heat the gelatin in a small saucepan over low heat or in the microwave in 10-second bursts, stirring until it dissolves completely. Set aside to cool slightly.
- In a large mixing bowl, beat the softened cream cheese and sugar with an electric mixer until smooth and creamy. Add the Alphonso mango puree and blend until combined. Pour in the whipped coconut cream and fold gently with a spatula. With the mixer on low, slowly add the dissolved gelatin and mix just until incorporated.
- Remove the springform pan from the refrigerator. Pour the mango filling over the chilled crust, smoothing the top with a spatula. Tap the pan gently on the counter to release any air bubbles. Cover the pan loosely with plastic wrap or a plate.
- Place the cheesecake in the refrigerator and chill at 38°F (3°C) for at least 5 hours, or until the filling is completely set and firm to the touch. The cheesecake should be fully chilled before adding the topping.
- Once the cheesecake is fully set, remove it from the refrigerator. Gently warm the passionfruit jelly until it is pourable but not hot, then pour it over the top of the cheesecake, spreading it evenly with a spatula. Return the cheesecake to the refrigerator for 30 minutes to allow the glaze to set.
- Run a thin knife around the edge of the pan, then release the springform. Slice the cheesecake with a clean, sharp knife, wiping the blade between cuts for neat slices. Serve chilled, with extra passionfruit seeds or fresh mango slices if desired.
