Before you start

Before beginning, ensure that your pork chops are removed from the refrigerator at least 20 minutes before searing to reach room temperature, which promotes even cooking. Wash and dry the baby potatoes thoroughly before halving them.

Slice your mushrooms evenly and pick the fresh thyme leaves from their woody stems. Preheat your oven to 375°F (190°C) so it is fully heated by the time you are ready to assemble the casserole for baking. Have your skillet and baking dish cleaned and ready to use.

Ingredients at a glance (5)
  • 4 pork chops, bone-in
  • 1 lb baby potatoes, halved
  • 8 oz mushrooms, sliced
  • 1 cup heavy cream
  • 1 tbsp fresh thyme leaves

Instructions

Searing the pork

  1. Sear the pork chops
Heat a large skillet over medium-high heat. Sear the pork chops until golden brown on both sides. Remove from the skillet and set aside while preparing the sauce base.
Look for The chops should have a deep golden crust on both sides.
Tip Do not overcrowd the pan to ensure a proper sear rather than steaming the meat.

The pork should have a deep, mahogany-brown crust on both sides. The kitchen should smell of seared meat and fat, indicating that the Maillard reaction has successfully occurred.

Ensure the skillet bottom shows bits of browned protein, which are essential for building the base of your sauce.

Preparing the sauce

  1. Prepare the sauce and assemble
In the same skillet, sauté the mushrooms until softened. Pour in the heavy cream and stir in the fresh thyme, allowing the mixture to simmer briefly. Arrange the halved baby potatoes and seared pork chops in a casserole dish, then pour the hot mushroom cream sauce evenly over the top.
Look for The sauce should be slightly thickened and aromatic.
Tip Scrape the browned bits from the bottom of the skillet into the sauce for extra flavor.

The sauce should look smooth, creamy, and fragrant with fresh thyme. The mushrooms should be tender and reduced in size. Once combined with the potatoes and pork in the casserole dish, ensure the liquid partially covers the ingredients so they cook evenly in the oven without drying out.

Final baking

  1. Bake until finished
Transfer the casserole dish to a preheated oven at 375°F (190°C). Bake until the potatoes are tender and the pork chops reach an internal temperature of 145°F (63°C). Remove from the oven and let the pork rest for 3 minutes before serving.
Look for The sauce should be bubbling and the potatoes tender when pierced with a fork.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Use a meat thermometer to ensure the pork is cooked perfectly without drying out.

The dish is ready when the sauce is bubbling vigorously around the edges and the top of the pork chops shows a light golden color. The potatoes should be tender when tested with a knife. The entire dish should look cohesive, with the sauce thickened into a luxurious, clingy consistency.

Common mistakes

A common mistake is overcrowding the skillet during the searing process, which causes the pork to steam instead of developing a golden-brown crust. Always sear in batches if necessary.

Another error is using too high an oven temperature, which can cause the cream sauce to boil over or separate. Stick to the recommended 375°F (190°C) for a gentle, uniform bake that allows the flavors to meld without breaking the sauce emulsion.

How to tell it’s done

The pork chops are perfectly done when they reach an internal temperature of 145°F (63°C). At this stage, the meat should be opaque and tender. The potatoes should be easily pierced with a fork with no resistance in the center.

Because the dish continues to carry heat while resting, it is important to remove it from the oven promptly once the target temperature is reached to maintain the juicy quality of the chops.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
