Tips for success
For the best flavor, use a good-quality condensed cream of chicken soup—it makes a difference.
If you prefer a thicker sauce, you can stir in a slurry of cornstarch and water during the last 30 minutes of cooking. For extra richness, add a splash of heavy cream just before serving.
This recipe is incredibly versatile. Try adding a pinch of red pepper flakes for heat, or swap the artichokes for chopped mushrooms.
You can also use the cooked chicken mixture as a filling for tacos or stuffed shells. The leftovers are great in sandwiches or over baked potatoes.
Variations
- Spicy Kick: Add 1/2 teaspoon red pepper flakes or a chopped jalapeño along with the spinach for a bit of heat. You can also use pepper jack cheese instead of mozzarella.
- Mushroom Lover's: Replace the artichokes with 8 oz sliced mushrooms, sautéed briefly before adding. The earthy flavor pairs beautifully with the garlic and cheese.
- Low-Carb Option: Skip the pasta and serve the chicken mixture over cauliflower rice or zucchini noodles. The sauce clings well to vegetables, keeping it satisfying without the carbs.
- Cheesy Herb Twist: Use shredded Italian cheese blend instead of mozzarella, and add 1 teaspoon dried Italian seasoning along with the garlic herb butter. This gives a more complex herb flavor.

In the morning, place the insert in the slow cooker and cook as directed. Add 30 minutes to the cooking time if starting from cold.
Serving ideas
Serve this creamy chicken over hot pasta, rice, or mashed potatoes to soak up the sauce.
A side of crusty bread or a simple green salad completes the meal. For a low-carb option, serve over cauliflower rice or zucchini noodles.
This dish is hearty enough to stand alone, but it also pairs well with roasted vegetables or a crisp Caesar salad. Garnish with fresh parsley or extra mozzarella for a pretty finish. Leftovers make a great lunch the next day.

Ingredients
- 1 1/2 lb boneless skinless chicken breasts
- 4 cups fresh baby spinach
- 14 oz canned artichoke hearts, drained and quartered
- 1 can (10.5 oz) condensed cream of chicken soup
- 2 cups shredded whole-milk mozzarella cheese
- 2 tbsp garlic herb butter
- 12 oz penne pasta, cooked al dente
Instructions
- Place the chicken breasts in an even layer in the bottom of a 7-quart slow cooker. Scatter the fresh spinach and quartered artichoke hearts over the chicken. Spoon the condensed cream of chicken soup over the top, spreading it gently to cover some of the vegetables.

- Once cooked, carefully remove the chicken breasts to a cutting board. Shred with two forks, then return the shredded chicken to the slow cooker. Stir everything together gently to combine the sauce, spinach, and artichokes.
